Ingredients

  • 2 tablespoons fennel seeds
  • 6 cloves garlic (crushed or finely grated)
  • 1 teaspoon hot paprika (i used re)
  • 3 tablespoons olive oil
  • 1 tsp Kosher salt
  • Freshly ground Pepper
  • 1 and 1/2 pounds thick bone-in pork loin chops
  • 4 large shallots (sliced ~1/4 in.)
  • 1/2 cup fresh flat-leaf parsley leaves
  • 2 teaspoons red wine vinegar (+ more as needed )
