Layers of Lasagna and fried eggplant with ricotta, mozzarella and tomato sauce

Ingredients

  • 1 med/large eggplant peeled and sliced lenghtwise 1/8" thick
  • Oil for frying
  • 5 eggs divided
  • 1-2 cups of flour
  • 2 tablespoons of water for egg wash
  • 6 Cups of Tomato Sauce having extra is a good idea
  • 2 1/2 cups of shredded mozzarella cheese
  • 1 1/2 cups of grated parmesan cheese
  • 15 oz of ricotta cheese
  • 1/2 lb of Lasagna noodles*
  • Salt and pepper to taste *
