Easy Seafood Paella

This is my Snapshot and Snippets version of Paella and is tasty and east to do all in one pan. And no snails!


  • 2 cups of water or chicken or fish stock
  • 3 tbsp olive oil
  • 1 large red onion (chopped)
  • 2 cups Spanish rice or short grain rice (soaked in water for 15 minutes and then drained)
  • 4 garlic cloves (chopped)
  • 2 cup large pinches of Spanish saffron threads (soaked in 1/2 the water/stock)
  • 1 tsp Paprika
  • 1 tsp cayenne pepper
  • salt
  • 1/2 packet mini plum tomatoes (chopped in two)
  • 1 yellow pepper ( chopped)
  • 6 oz green beans
  • 2 handfuls of frozen peas
  • 1 lb prawns or large shrimp or your choice (peeled and deveined)
