Easy Crockpot Tomato Soup

Can't Stay Out of the Kitchen

 

This scrumptious Tomato Soup recipe is excellent comfort food. Tossing everything in the slow cooker makes it so quick and easy too. Gluten free and vegan.

Ingredients

  • 2 28-oz. cans crushed tomatoes (undrained )
  • 2 16-oz. cans Italian stewed tomatoes (undrained)
  • 2 16-oz. cans italian diced tomatoes (undrained)
  • 2 16-oz. cans fire roasted tomatoes (undrained)
  • 16 oz. carton vegetable broth ((see note below))
  • 1 large onion (chopped)
  • 1 red bell pepper (diced)
  • 1 leek (green top removed, sliced)
  • 2 cloves garlic (minced)
  • 2 ribs celery (diced)
  • 2 carrots (peeled and sliced)
  • 1 tsp. dried basil
  • 1 tsp. dried oregano
  • 1 tsp. dried thyme
  • 1 tbsp. dried parsley
  • 1 tsp. sea salt
  • 1/2 tsp. ground black pepper ((I actually used one teaspoon) )
  • homemade croutons (for garnish, if desired)
  • parmesan cheese shavings (for garnish, if desired)
