Curried Apple and Acorn Squash Soup

Savory and delicious Indian soup recipe with apples, acorn squash, carrots and other veggies. This spicy recipe includes cayenne pepper, curry powder and cilantro and is vegan and gluten free.

Ingredients

  • 3 tbsp. coconut oil
  • 1 leek (green top removed)
  • 2 ribs celery (diced)
  • 1 large onion (chopped)
  • 2 large cloves garlic (minced)
  • crinkle cut carrots (carrot chips)
  • 2 Gala apples (unpeeled)
  • 2 tsp. curry powder
  • 1 tsp. pink Himalayan sea salt
  • 1/2 tsp. pepper
  • Several dashes cayenne pepper
  • vegetable juice
  • 2 acorn squash roasted (seeds)
  • 1 cup coconut milk or almond breeze
  • 1/2 cup cilantro (chopped)
  • snipped chives for garnish (if desired)
