A fruity and contemporary twist to the traditional Indian rice preparation "Pulao".

Ingredients

  • 1 cup Basmati rice
  • 3-4 table spoon ghee (clarified butter)
  • 2-3 cardamoms (crushed)
  • 5-6 cloves
  • 5-6 whole peppers
  • 2 bay leaves
  • 1 mace
  • 1 stick cinnamon
  • 1 table spoon cumin seeds
  • 1 green chili (fine chopped)
  • 1 inch ginger (thin long chopped)
  • 1 onion (thin long chopped)
  • 8-10 cashews (halved)
  • 60-80 grams dried cranberries
  • 1 and 1/4 cups water
  • 2 table spoon honey
  • 1 lemon (squeezed)
  • 2 tea spoon rose essence
  • 3-4 table spoon milk
  • 1 tea spoon amchoor powder
  • 2-3 stems coriander leaves (fine chopped)
