Ingredients

  • 2 Potatoes cut into cubes, peel if desired
  • 1/4 cup onion red, sliced
  • 1/4 cup peppers red, orange, yellow, green - it's up to you!
  • 8 ounces Tofurky Chorizo
  • 1 tbsp olive oil
  • 1 tsp paprika
  • 1/2 cloves garlic minced
  • 1/8 tsp liquid smoke
  • Fresh cilantro small handful
  • Salt & pepper to taste
  • 2 eggs poach for 5 minutes
