Chicken Parmesan with Quinoa & Tomato Sauce

Quinoa is a great wheat-free alternative to starchy grains. It´s a great substitute to other grains. This is my chicken quinoa recipe.

Ingredients

  • 1 cup quinoa
  • 1 green bell pepper
  • 1,5 cup mushrooms
  • 1/2 cup onion
  • 200 ml tomato sauce (some sauce you´d also use for pasta dishes)
  • 1 cup chicken broth
  • 1 tbsp garlic, powdered
  • 2 tbsp whole wheat flour
  • 1 cup shredded parmesan
  • 2 tsp garlic, powdered
  • 4 chicken breasts (boneless)
  • salt & pepper (to season)
