Chicken and Mushroom Casserole

Can't Stay Out of the Kitchen

 

This old-world Ukrainian dish is simple yet a delicious way to get a stick-to-the-ribs dinner. Serve this casserole over rice, mashed potatoes or noodles. Gluten free.

Ingredients

  • 2 large boneless (skinless chicken breasts)
  • fresh mushrooms (sliced thickly)
  • 1/3 cup onion (diced)
  • 2 cloves garlic (minced)
  • salt and pepper (to taste)
  • 1/2 cup Bob’s Red Mill all-purpose gluten free flour
  • 4-6 tbsp. olive oil (divided use)
  • fresh parsley for garnish (if desired[br]

  • 2 tbsp. unsalted butter
  • 2 tbsp. Bob’s Red Mill all-purpose gluten free flour
  • 3/4 cup chicken broth
  • 1/2 cup half-and-half
  • 1 1/2 tsp. lemon juice
