Cherry tomatoes with onions, garlic, leeks, fresh basil and a delicious topping including Parmesan, Romano and Asiago cheeses. Gluten free.

Ingredients

  • cherry tomatoes
  • 10.5 sunburst cherry tomatoes
  • 2 large onions (diced)
  • 4-5 tbsp. olive oil
  • 1 tsp. pepper
  • 2 tsp. kosher salt
  • 1/4 cup brown rice flour
  • fresh basil chopped – about ¾ to 1 cup chopped
  • 1 tbsp. roasted garlic
  • 1 leek (green top removed)
  • 1 1/4 cups brown rice flour
  • 1/2 cup garbanzo bean flour
  • 1/2 cup potato flour
  • 1/4 cup oat flour
  • 1 tsp. salt
  • 2 tsp. sugar
  • Italian cheese blend: Parmesan (Asiago)
  • 1 cup coconut oil or butter
