Buckwheat Zucchini Fritters

A delicious side dish for lunch or dinner, and also works well for breakfast!

Ingredients

  • 1 medium zucchini (shredded (about 2 cups))
  • 2 eggs
  • 1/4 cup buckwheat flour
  • 2 tablespoons chives (fresh (optional))
  • 1/4 to 1/2 cup lard (home rendered from pastured pigs)
