  • 3 lbs good quality stewing beef
  • 1/4 cup flour or cornstarch
  • salt and pepper to season
  • 2 Tbsps butter
  • 3 Tbsps vegetable oil
  • 3 Tbsps brandy
  • 2 Tbsps vegetable oil
  • 2 Tbsps butter
  • 2 large carrots (finely chopped)
  • 2 cloves garlic (minced)
  • 1 medium yellow onion (minced)
  • 1 Tbsp tomato paste
  • 2 Tbsps flour or corn starch
  • 4 sprigs parsley, stem only
  • 4" piece celery
  • 2 bay leaves
  • 2 sprigs fresh thyme
  • 2 cups beef broth
  • 1 cup good red wine
  • 8 oz white buttom mushrooms
  • 1 1/2 cups pearl onions (or preserved Amsterdam onions)
