Black Bean Mango Salad only takes a bit of chopping. Toss in a bowl, and you've got a spectacular side dish!
- 1/2 cup red onion, diced, 64 grams
- 3/4 cup orange bell pepper, diced, 96 grams
- 3/4 cup mango, peeled and diced, 96 grams
- 1 cup corn, 147 grams
- 2 cups black beans, 360 grams
- 4 tablespoons vinaigrette dressing, homemade
- Dice red onions, orange bell pepper, and mango. Combine all ingredients in a medium sized bowl. Toss and enjoy!
