Belly Pork Chilli Con Carne

Chilli Con Carne recipe made with pork belly, Stout, chorizo, dark chocolate AND! chickpeas. The chickpeas added a nice texture to the soft succulent pork belly. 

Ingredients

  • 1.5 kg belly pork (Skin removed and cut into cubes)
  • 2 onion (chopped)
  • 1 red pepper (chopped)
  • 1 green pepper (chopped)
  • 100 g chorizo (cut into small cubes)
  • 30 g coriander (chopped - save some for garnish)
  • 1/2 tsp coriander powder
  • 1/2 tsp cumin powder
  • 1 tsp smoked paprika
  • 1 tsp paprika
  • 1 tsp ginger powder
  • 1 cinnamon stick
  • 5 cloves garlic (peeled and crushed)
  • 300 ml water
  • 200 ml Stout (I use Guinness )
  • 50 g dark chocolate
  • 3 bird's eye chilli (more if you prefer it HOT )
  • 1 tsp hot chilli powder
  • 1 400g tin chickpeas (drain and wash )
  • pinch salt and pepper
  • 1 Chicken stock cube
