Beef Tips with Quinoa

Can't Stay Out of the Kitchen

 

This sumptuous beef entree is made in the slow cooker. It uses beef, a rice/quinoa blend, bell peppers, carrots, peas, celery, onions, leeks and garlic. This recipe is seasoned to perfection and is healthy, low calorie, gluten free and clean eating.

Ingredients

  • 2-3 lbs. round steak (cut in thin strips )
  • 32 oz. beef broth (or more as needed )
  • 1 large onion (diced)
  • 1 leek (green top removed, sliced)
  • 2 large cloves garlic (minced)
  • 1 green bell pepper (cut in strips)
  • 1 red bell pepper (cut in strips)
  • 2 ribs celery (sliced on the diagonal)
  • 2 cups petite baby carrots
  • 1 cup green peas
  • 1 1/2 tsp. sea salt
  • 1 tsp. pepper
  • 1 tsp. parsley
  • 1 tsp. thyme
  • 1 tsp. marjoram
  • 1 tbsp. worcestershire sauce ((Lea & Perrin’s is gluten free))
  • 1 cup rice and quinoa blend
  • fresh parsley (or thyme, for garnish, as desired)
