Beef Short Rib Curry Udon

Similar to a ramen except with silky, thick udon noodles, this beef short rib curry udon is a real treat!

Ingredients

  • 750 g beef short ribs (bone in)
  • 1 tsp sesame oil
  • 3 cloves garlic (peeled and roughly chopped)
  • 1 inch ginger (skin on and roughly sliced)
  • 3 spring onions (roughly chopped)
  • 3 tbsp soy sauce
  • 3 tbsp mirin
  • 1 tsp brown sugar
  • 750 ml dashi or beef stock (good quality)
  • 40 g Japanese curry roux (2 blocks - I use S&B Golden Curry brand)
  • 100 g bamboo shoots (sliced in half lengthways)
  • 40 ml soy sauce
  • 1 tsp sesame oil
  • 1 tsp brown sugar
  • 2 large eggs
  • 150 ml soy sauce
  • 150 ml water
  • 2 tbsp mirin
  • 300 g udon noodles
  • 250 g beansprouts
  • 3 spring onions (finely sliced)
  • pickled ginger (sliced into strips)
