Baked Chili Cheese Fries are healthy and vegetarian. Great comfort food without the guilt.

Ingredients

  • 2 large baking potatoes, cut into quarter-inch-thick strips (like russet)
  • 4 tablespoons olive oil, divided
  • 1 medium onion, diced
  • 2 cloves garlics, minced
  • 1 large orange bell pepper, or yellow bell pepper, diced
  • 1 15 oz can black beans, drained and thoroughly rinsed
  • 2/3 cup diced tomatoes
  • 2 teaspoons oregano
  • 2 teaspoons onion powder
  • 2 teaspoons garlic powder
  • 1/2 teaspoon paprika
  • 1/2 teaspoon cumin
  • 1/4 teaspoon chili powder
  • 1 cup shredded cheddar cheese
  • 1/4 cup chives, chopped
  • salt and freshly ground black pepper
