This recipe is the starter dish of my healthy 2-course menu on a budget for two people. The starter dish is a delicious avocado mussels salad.

Ingredients

  • 200 g mussels, pre-cooked
  • 100 g arugula
  • 125 g mushrooms
  • 1 small onion
  • 1 medium tomatoe
  • 2 tsp sunflower seeds (already peeled)
  • olive oil (for cooking)
  • 1/2 avocado
  • 1/4 tsp salt
  • 1/2 tsp pepper
  • 1/4 tsp turmeric
  • 1/4 tsp cayenne pepper
