Sometimes you might come across a recipe that requires eggs plus additional yolks or whites. It also isn’t uncommon to find a recipe that requires only yolks or whites, so separating eggs is a good, basic kitchen technique to master.

Egg yolks are often used in rich recipes like custards, ice creams, puddings, and curds, whereas whites are usually used recipes that you want to be made fluffy by the addition of whipped egg whites, or recipes that are deliberately made lighter by omitting the higher fat yolks.

A little egg white left behind, clinging to the outside of the yolk won’t impact your recipe. But, when using only the whites, it is essential that you don’t mistakenly leave any of the yolk behind.

Yolk mixed in with the white alter your recipe negatively due to the fat content of the yolk – the egg whites won’t whisk up properly if your recipe is calling for soft or stiff peaks, for example.`

How to Separate Eggs

There are a few different ways to separate eggs, but I think that the easiest and least messy method for separating eggs is the one that involves transferring the yolk back and forth between the two halves of the shell.

First, place two clean bowls in front of your workspace.

Next, crack the egg, just like you normally would. Whether you crack it on the counter or on the edge of the bowl is up to you.

Do whatever feels most comfortable.

When you crack the egg, let the whites fall into one of the bowls you’ve laid out. You want to slowly, and carefully open the cracked egg so that the yolk stays inside and the whites come out.

Pass the egg yolk back and forth from one half of the shell to the other, while allowing any remaining yolk seep out and into your bowl.

After you’ve gotten all of the white out of the shell, you can place the yolk into the other empty bowl.

Repeat this process until you’ve separated the number of eggs that your recipe calls for.

Recipe Inspiration

Now that you know how to separate eggs, you might need some recipe inspiration to practice your new skill.

Or, in the even that this isn’t a new skill for you and you already have some separated egg whites and yolks laying around in the fridge, perhaps leftover from some other culinary deliciousness, here are some recipes ideas for you:

Recipes Using Egg Whites

I never would have thought to add extra egg whites to enchiladas, but this Healthy Chicken Enchilada "brinner" recipe looks amazing!

These Pumpkin Protein Bars look amazing and like a perfect, healthy snack to have on hand for munching when the late afternoon energy slumps strike.

Homemade marshmallows, like these Raspberry Vanilla Bean Marshmallows, are a fun way to use egg whites. They’re not as hard to make as you might imagine, and they make a great addition to some homemade hot cocoa.

Recipes Using Egg Yolks

Citrus Curd is a delicious accompaniment slathered on top of scones or layered in a trifle. You can make all different types: lemon, lime, orange, or grapefruit.

You can even make it in the microwave.

I love homemade pudding and this Dark Chocolate Raspberry Pudding looks amazing. It’s the perfect way to use up a couple of egg yolks.

As if Crème Brûlée wasn’t decadent and amazing enough on its own…you could try this Red Velvet version.

Have you every opened your pantry to find your delicious, liquid gold honey suddenly completely crystallized? Its a bummer, but the good news is there is no need to toss it out.

It hasn't gone bad at all, thanks to the antibacterial properties of honey it can actually last for several years.

<img style="font-size: 12px;" data-pin-media="https://food-fanatic-res.cloudinary.com/iu/s--l97hDvUB--/t_full/cs_srgb,f_auto,fl_strip_profile.lossy,q_auto:420/v1452719898/how-to-decrystallize-honey-photo.jpg" data-pin-description="How to Decrystallize Honey is easier than you think.

Why Does Honey Crystalize?

Crystallization of honey is a natural process and, though not convenient, is nothing to worry about. Simply put, the glucose in the honey is precipitating out of the liquid honey.

There are a few factors that can affect how quickly your honey crystallizes. That will depend on factors like the conditions under which your honey has been stored and the variety of honey that you have.

Higher fructose honeys will last longer without crystallizing. Honey stored at colder temperatures will crystallize faster than honey stored above 70 degrees F.

Which explains why we have more of a problem with this during the fall and winter months than we do in the summertime.

You can actually still use honey it crystallized form, so long as you can get it out of the container. It will soften and dissolve when added to a cup of hot tea just fine.

<img data-pin-media="https://food-fanatic-res.cloudinary.com/iu/s--0tm1btP7--/t_full/cs_srgb,f_auto,fl_strip_profile.lossy,q_auto:420/v1452720015/how-to-decrystallize-honey-picture.jpg" data-pin-description="How to Decrystallize Honey starts with soaking in hot water.

How to Decrystallize Honey

There are a couple of ways to rid your honey of its crystallization, all of which are really pretty easy.

1. Soak in Hot Water

My favorite way is to boil water in my tea kettle, then place the jar or container of honey in a large mixing bowl or pot and pour the hot water around it. Let it soak for several minutes until the honey has softened and liquefied itself again.

How long it needs to soak will depend on how crystallized it is, how cold it has been stored at, and the quantity of honey. Naturally, a larger container will take longer than a small amount.

If needed, replenish with additional hot water if it is taking a long time.

2. Microwave

Another way to decrystallize honey is to place the honey in a microwave-safe container, with the lid removed, and microwave the honey over medium power for 30 seconds at a time, stirring in between microwaving sessions. Continue until it has been decrystallized, careful not to scorch or boil the honey.

What I don't prefer about this method, is that you can't really do this with honey that comes in a plastic bottle. The microwave can warp the plastic (I tried this before and my bottle definitely came out shrunken and misshapen), so you really need to remove the honey and put it in a glass or ceramic container.

But, that can be kind of difficult when the honey is stuck in its solid state!

<img data-pin-media="https://food-fanatic-res.cloudinary.com/iu/s--Uzp2cbnS--/t_full/cs_srgb,f_auto,fl_strip_profile.lossy,q_auto:420/v1452720108/how-to-decrystallize-honey-image.jpg" data-pin-description="How to Decrystallize Honey requires hot water to liquefy the honey. 5 Favorite Uses for Honey

Honey isn't just for adding to a cup of hot tea. Here are a few of our favorite uses for this delicious, sweet liquid gold.

Natural Cough and Sore Throat Remedy: Honey is the perfect addition to Homemade Cough Syrup. It helps coat the throat and will draw pus from wounds and has antibacterial and antimicrobial properties. Plus, it makes the whole concoction taste a lot better.

Easy Chicken Dinner Recipes: One of our absolute favorite easy chicken dinner recipes - in terms of taste and the fact that it takes literally 10 minutes max to whip up - is this Honey Mustard Baked Chicken. Chicken is baked up to sweet, tender perfection in a sauce of honey, fresh rosemary, and dijion mustard. This One Pan Honey Roasted Turkey and Vegetables also looks amazing!

<img data-pin-media="https://food-fanatic-res.cloudinary.com/iu/s--E1unONvD--/t_full/cs_srgb,f_auto,fl_strip_profile.lossy,q_auto:420/v1452720219/how-to-decrystallize-honey-pic.jpg" data-pin-description="How to Decrystallize Honey takes only a few minutes.

Baking: Honey is a great sugar substitute in baking, especially in recipes like this Gluten Free Cornbread. When substituting in recipes that originally call for sugar, you won't need to use as much honey as sugar to achieve your desired sweetness due to honey's high fructose content

Drink Sweeteners: Honey is great for sweetening drinks because it dissolves a lot easier than granulated sugar does, which means you can eliminate making a simple syrup. Try: Boozy Pumpkin Chai Latte and Fig Bees Knees.

Condiment: Honey is great drizzled or used as a dip for many things. Kids can dip homemade chicken tenders in honey. Drizzle it on top of pancakes or waffles in place of syrup. Personally, I can't wait to try these Paleo Baked Pears.

If you’ve ever been wondering how to freeze spinach, or why you might want to do that, look no further! I often buy those extra large tubs of fresh baby spinach because they’re usually the same price as the smaller containers but we don’t always eat through the whole container fast enough. Pretty quickly I learned about freezing spinach so I could benefit from the better price without ending up with wasted food.

Using any of these 4 methods you can freeze spinach for later use – I’ll give you some recipe examples to go along with each method as well. Note: Just like most frozen vegetables, the vegetable is changed in the freezing process. Don’t expect to freeze spinach and be able to thaw it for a fresh salad. The best ways to use frozen spinach later on involve using it in recipes where it is cooked or blended so the consistency and texture doesn’t matter.

1. Make freezer smoothies

Frozen spinach works great for freezer smoothies. You don’t have to worry about the post-freezing texture when it is blended with other ingredients.

What is a freezer smoothie? It is basically a pre-assembled baggie that contains all of the necessary ingredients for your favorite smoothie recipe.

Place your favorite fruits and veggies in individual sized freezer baggies. Label the bag the contents, date, and then freeze it.

Next time you want a smoothie, open the bag and transfer the contents to the blender along with any liquids or protein powders and blend.

2. Freeze pureed spinach in ice cube trays.

For this method, I like to puree 3 – 4 cups of packed spinach with 1 cup of water. I find that the “juice” cycle on my blender works best. After pureeing, I pour the juice into ice cube trays and then freeze the spinach cubes.

After the cubes are frozen, pop them out of the tray and into a freezer bag. Label the bag with contents and date before stashing it in your freezer.

This method is perfect when you just want to add small amounts of spinach puree to smooth, chunk-free recipes like smoothies, soups or sauces. Add frozen, pureed spinach into your favorite spaghetti sauce recipe for an extra boost of vegetables.

3. Freeze chopped spinach in baggies.

Freeze pre-portioned of chopped spinach in small freezer baggies. You’ll want to think about what amount and size you typically would use in a recipe. Really it will depend on how you want to use the spinach and what recipes you make most frequently. I like amounts ranging from 1/2 – 1 cup best.

This option is great for anything you would want to add pre-chopped spinach to.

If the recipe is something that is already pretty liquid (like soups) and thus won’t be affected by adding a little extra moisture to the recipe, you can pretty safely just add the spinach directly to the recipe according to the recipe's instructions.

If you’re making something where extra moisture won’t go unnoticed, like a spinach lasagna, you’d want to thaw the spinach and squeeze it dry.

I think the easiest way is to place thawed spinach inside a paper towel and squeeze that over the sink. Sautéing the spinach for a minute or two will also dry them out a little more.

4. Freeze spinach in a baggie - minus the chopping.

Freezing whole spinach leaves is ideal when you know you’d like to add spinach to various smoothies, but you don’t want to be boxed into anything in particular the way you would if you pre-assemble smoothie bags. Or if, like me, you’re feeling a little too lazy to do any extra prep work.

I’ve been known to stick a full tub of baby spinach directly into the freezer, but it is probably best to transfer it to something a little more air-tight, like a gallon sized freezer bag.

You can then pull out a handful or two of spinach as you need it.

Shredded chicken is a great basic to prepare in advance for use in any number of recipes. Just think how much faster it would be to make up a batch of your favorite chicken enchiladas or chicken tortilla soup (Yes, I’ve got Mexican food on the brain!) if you already have the chicken prepared!

Aside from dinner recipes, having a small stock of shredded chicken is great for making a quick lunch – you can add it on top of a salad, whip up a quick chicken salad sandwich, or add it to a simple quesadilla.

For purposes like these, I find it best to prepare a large batch of shredded chicken ahead of time and freeze it in the portions that I most often use. This will depend on your personal preference, so take a little time to think about how you think you’ll use the chicken, what recipes you might make with it, and how much chicken will be utilized. I find that 1, 2, and 3 cup portions are ideal.

So, how do you shred chicken?

Well, first you have to cook it. You can do this several different ways – in the crockpot, in the oven, or poach it stovetop. Leftover roasted or rotisserie chicken also works well.

Crockpot: The slow cooker is great because you can leave the chicken unattended and because you can add other ingredients to season the chicken. For example, if you know you want a batch of Mexican shredded chicken, you might add some cumin, chile powder, chipotle peppers, salsa, cilantro, or other ingredients. I love this Tex-Mex Slow Cooker Chicken.

Bake: Baked chicken can be shredded as well. You can season it as heavily and distinctively as you’d like or you can keep it simple with a basic salt and pepper.

Poach: If you don’t know how to poach, check out this great tutorial from TheKitchn.

Now that you’ve cooked the chicken you can shred it!

If you used bone in chicken, first you’ll want to pull all of the meat off the bones. Save the bones for making homemade chicken stock (yum!).

There are a few ways you can shred the meat:

With your Fingers: All you do here is use your fingers to pull the chicken apart into chunks. They can be as big or as small as you like. If you end up with bigger pieces, just pull them apart into smaller ones.

Using Two Forks: Hold one fork in each hand. I like to use the fork in my non-dominant hand to hold the piece of chicken steady. With the fork in my dominant hand I scrape at the piece of chicken to pull it apart.

Using a Stand Mixer: This is a method that I didn’t hear of until a couple of years back (thanks, Pinterest!). It is definitely the fastest and easiest method for shredding chicken. Why is that? Because all you do is dump the meat into the bowl of a stand mixer and mix over low speed until the chicken reaches whatever shred-size you want. The mixer does all the work!

Directions

Preheat oven to 375°F. Line a large baking sheet with parchment paper.

In a large mixing bowl, add the flour, 2/3 cup sugar, pumpkin pie spice, baking soda, salt, and orange zest. Whisk well.

Cut the butter into the flour mixture using a pastry blender, 2 knives, or by grating the butter on a cheese grater until the mixture resembles coarse crumbs. Stir in the pecans and raisins.

In a separate, medium sized bowl, add the eggs, sour cream, and vanilla. Beat, using a wire whisk, until well blended.

Make a well in the center of the flour mixture. Pour the egg mixture in the center and stir using a wooden spoon until a soft dough forms.

Turn the dough out onto a lightly floured counter. Knead the dough for approximately 1-2 minutes, or until it comes together. Form the dough into a 10-inch circle and place on the prepared baking sheet.

Score the top of the circle using a butter knife into 12 wedges. Sprinkle the top with the remaining tablespoon of sugar.

Place the baking sheet in the middle rack of the preheated oven. Bake the scones for 30 minutes, or until they are golden brown on top.

Remove the baked scones from the baking sheet and cool on a wire rack for 5 – 10 minutes. Cut into wedges and serve.

While the cheese is melting, the corn off the cob. Add it to a cast iron skillet over medium-high heat and cook (dry, without oil) until it begins to roast and brown, about 3 – 5 minutes.
