<b>For the Rye Dough:</b>

<li>1/2 cup Sour Cream, or plain Greek yogurt (any fat percentage)</li>
<li>3 tablespoons Unsalted Butter, melted and slightly cooled</li>
<li>1 teaspoon Kosher Salt</li>
<li>1 cup All-Purpose Flour, unbleached</li>
<li>1 cup Dark Rye Flour</li>
<li>1 teaspoon Caraway Seed</li>
<li>Egg Wash, 1 large egg whisked with 1 tablespoon water</li>
</ul>
<b>For the Pierogi Filling:</b>

<li>1/2 cup Sauerkraut</li>
<li>1/3 cup Shredded Swiss Cheese, finely chopped</li>
<li>1/8 pound Thinly Sliced Pastrami, finely chopped (about 1/2 cup)</li>

<b>For the Thousand Island Dressing:</b>

<li>1/2 cup Mayonnaise</li>
<li>3 tablespoons Ketchup</li>
<li>2 tablespoons Sweet Pickle Relish</li>
<li>1/4 teaspoon Worcestershire Sauce</li>
<li>3-4 dashes Hot Sauce, use your favorite</li>

<strong>To Make the Pierogi Dough:</strong></p>
<ol>
<li>
Whisk 1 egg, sour cream or yogurt, butter, and salt in a bowl.</li>
<li>
Add the flours and caraway seeds to a large bowl.</li>
<li>
Gently stir the wet ingredients into the flour. The dough will initially be very dry and shaggy, seeming as if it will never come together, but have no fear: Keep stirring, and it will pull itself into shape.</li>
<li>
Once the dough starts to come together, press and smash it against the sides of the bowl with your palms, picking up dough bits and essentially kneading it within the bowl until it forms a ball.</li>
<li>
Tip the dough and any remaining shaggy flakes out onto a clean work surface or Roul’Pat. Knead until smooth, about 1 minute. Cover the dough with the bowl and let rest 15 minutes.</li>
</ol>
<p>
<strong>To Make the Pierogi Filling:</strong></p>
<ol>
<li>
While the dough rests, mix the sauerkraut, cheese, and pastrami in a bowl.</li>
</ol>
<p>
<strong>To Make the Thousand Island Dressing:</strong></p>
<ol>
<li>
Stir the ingredients in a small bowl. (Dressing can be made up to 1 week ahead; cover and refrigerate.)</li>
</ol>
<p>
<strong>Assemble the Pierogies:</strong></p>
<ol>
<li>
Line a rimmed baking sheet with waxed paper or parchment paper. Have the egg wash at the ready.</li>
<li>
Divide the rested dough into 4 equal pieces with a bench scraper or knife. Set aside 3 dough pieces and cover with the mixing bowl. Roll remaining dough as thinly as possible into a rough 8- x 12-inch rectangle.</li>
<li>
Using a 3-inch round cookie cutter, cut out 6 rounds of dough. If the dough isn’t quartered evenly, you may get 5 rounds from one piece and 7 from another. Resist the temptation to re-roll dough scraps for additional rounds. It seems wasteful, but the dough won’t be as tender the second time around.</li>
<li>
Spoon 1 teaspoon of filling into the center of each dough round. Using your finger, swipe a very scant amount of egg wash—just a light touch—around the dough edge.</li>
<li>
Fold into a half-moon shape: Either fold the dough over the filling on the work surface—I call this “the blanket”—or gently cup the pierogi in your hand in a U shape—I call this “the taco.” Gently but firmly seal the pierogi by pinching and squeezing the edges together with your thumb and pointer finger. Start with one pinch at the top, then move to one “corner” of the pierogi and pinch along the edge back to the top. Repeat on the opposite side to finish sealing the pierogi.</li>
<li>
Transfer to the baking sheet and repeat with remaining dough rounds and filling. Freeze on the baking sheet, refrigerate up to 3 hours, or cook immediately.</li>
</ol>
<p>
<strong>TO BOIL FRESH OR FROZEN PIEROGIES</strong></p>
<ol>
<li>
Boil a pot of water over medium-high heat (fill approximately 1 quart water for every 6 pierogies).</li>
<li>
Add pierogies and cook until floating, 2 to 3 minutes for fresh and 4 to 5 minutes for frozen.</li>
</ol>
<p>
<strong>TO PAN-FRY FRESH OR BOILED PIEROGIES</strong></p>
<ol>
<li>
Heat 1 tablespoon neutral oil (like canola or vegetable) or melt 1 tablespoon unsalted butter in a skillet over medium heat.</li>
<li>
Add as many pierogies as will fit in a single layer without crowding.</li>
<li>
Cook until pierogies are brown and crispy, about 2 minutes per side. Repeat with additional oil or butter and pierogies.</li>
</ol>
<p>
<strong>TO DEEP-FRY FRESH OR FROZEN PIEROGIES</strong></p>
<ol>
<li>
Use an electric deep fryer or a large, high-sided pot filled with at least 2 inches of vegetable or canola oil (fill the pot no more than 1/3 full). Heat oil to 350 degrees.</li>
<li>
Add pierogies and cook until golden brown; frying time varies based on equipment, about 3 minutes for fresh and 5 minutes for frozen.</li>
</ol>
<p>
Line a baking sheet with paper towels. Transfer pierogies to the baking sheet and cool for 1 minute.</p>

"A meal without wine is like a day without sunshine," as the French epicurean Jean Anthelme Brillat-Savarin famously said. It's a quote I take to heart, having enjoyed sips, glasses, and bottles of wine with my meals most of my life. (Yes, we were totally the Italian-American family that let the kids have watered-down tastes of wine at big gatherings. So sue us.) And I might love wine, but I'm far from being a look-down-my-nose snob about it, which is why I'm digging these quirky but useful wine accessories from <a href="http://www.uncommongoods.com/dining-entertaining/wine" rel="nofollow" target="_blank">Uncommon Goods</a> that bring a little more sunshine into my wine-drinking lifestyle.</p>

Since they're white, unbreakable, and meant to be used outdoors, I thought the silicone wine glasses would be a perfect accessory for New York's <a href="http://newyork.dinerenblanc.info/" rel="nofollow" target="_blank">Diner en Blanc</a>, an enormous annual private picnic event. How right I was. Not only did the wine glasses sustain a bumpy trip up and down subway stairs and through city streets at rush hour, they were the hit of the evening from my fellow white-clad attendees. Swarmed by guests shouting "Look at those wine glasses!" as we strolled the grounds of Bryant Park with my silicone glass of sparkling wine, my friend and I felt like the prettiest girls at the ball—and when it came time for dancing, we squinched the glasses between our fingers to keep a good grip while boogeying down. Fair warning that there's a slight learning curve to using the Ravi, a wine chilling attachment that fits into the neck of a bottle. It requires pre-freezing before you can use it, much like an ice cream maker bowl, and unless you snap it together tightly, you'll end up with Grenache dribbling all over your white linen napkins.</p><div id="stp_target"></div>
<p>
But once you've got the hang of it, the Ravi becomes indispensable for those times when you realize you forgot to throw the Sauvignon Blanc in the fridge hours ago: because it snaps into the bottleneck, any wine you pour through its frozen stainless steel chamber automatically cools down as it's poured into the glass. And while it's great for flash-chilling white wines, I like using the Ravi to bring my red wines, typically stored as cold as I can keep them in the "wine cellar" (AKA basement of my non-central-air-conditioned house), to a proper 55-degree drinking temperature.</p>

Though we finished every drop of wine at the Diner en Blanc, when I'm drinking wine with my solo suppers at home, I tend to go glass by glass and crush a bottle over the course of a week. Having used many vacuum-sealing solutions for storing my wine, I was skeptical the Air Cork would actually work. Sure, it was adorable: a balloon you inflate in your wine bottle via a grape-shaped pump. But could it truly seal? Turns out it really can, and it's spectacular. Like a Dairy Queen employee rotating a Blizzard, I turned my Air Cork-filled bottle upside-down again and again, marveling at the airtight seal. And two days later, the wine inside was still as fruity and spicy as the day I opened it.</p>

We don’t always have the opportunity—or need—to finish an entire bottle of wine. The Air Cork gives fun-loving oenophiles a creative way to save the wine and stop it from oxidizing: by inflating a balloon that makes an airtight seal <i>inside</i> the wine bottle.</p>
<p class="Arial">
It’s so simple you don’t think it can work, but it does: a cute grape air pump is attached via small hose to a deflated balloon. When lowered into the bottle until it touches the surface of the leftover wine and then inflated, the balloon floats and seals itself to the sides of the bottle. A valve on the side of the grape pump lets the balloon deflate easily.</p>
<p class="Arial">
There are no small corks that can potentially get lost with this system, and the balloon rinses off with water. According to the Air Cork team, the wine will stay fresh for up to three days; to keep it longer, deflate and re-inflate the balloon for a fresh seal. (Be mindful, though, that no wine lasts forever and it will eventually turn into vinegar if you don’t drink it!)</p>

<li>1 Vanilla Bean, scraped, or 1 teaspoon vanilla bean paste, or 2 teaspoons vanilla extract</li>
<li>1/4 teaspoon Ground Nutmeg, freshly ground</li>
<li>6 large Egg Yolks, large</li>
<li>1/4 teaspoon Kosher Salt</li>

Preheat the oven to 325˚F and place a teapot filled with water on the stove to boil. Place your ramekins in a high-sided ovenproof baking dish like a 9x13-inch Pyrex or ceramic casserole dish. I also place a thin dishcloth beneath my ramekins to prevent shifting and clinking as they go into the oven.</li>
<li>
Whisk the cream, maple syrup, and nutmeg together in a 1-quart high-sided saucepan and place over medium-low heat. If using a whole vanilla bean, add both the scraped seeds and the pod to the milk; if using paste or extract, just whisk that in. Heat to a bare simmer, just until you see bubbles around the edge of the pan.</li>
<li>
While the cream heats and the water comes to a boil, place the egg yolks in a large heatproof bowl.</li>
<li>
When the cream comes to a simmer, discard the vanilla bean pod, if using, and whisk the hot cream slowly and evenly into the eggs until fully blended. Whisk in the salt.</li>
<li>
Divide the custard between the ramekins and gently place on the center oven rack. Carefully pour hot water from the teapot around the ramekins, making sure not to splash water onto the custard, until the water comes halfway up the sides of the pan.</li>
<li>
Bake for 20-40 minutes until the pots de crème are still slightly jiggly in the center but nearly firm; timing will vary based on the size and shape of your ramekins, so watch carefully so you don't overbake them.</li>
<li>
Carefully remove the dish from the oven and lift the pots de crème out of the water bath onto a wire rack to cool to room temperature.</li>
<li>
Cover each ramekin with its lid or plastic wrap and refrigerate at least 6 hours until completely chilled.</li>
<li>
Serve cold with your desired toppings: I love to place a dollop of crème fraiche or mascarpone cheese sprinkled with nutmeg or maple sugar on top of each pot de crème, and add a few shortbread fingers on the side for crunching or dunking.</li>

Slice the peppers in half lengthwise and remove the stem and any seeds. If there are any large, thick ribs, remove them as well.</li>
<li>
Heat a large, seasoned cast iron skillet over medium-high heat until searingly hot. Reduce the heat to medium and add 2 tablespoons olive oil.</li>
<li>
Add the peppers cut side down in a single layer—you may need to fry the peppers in two batches if you can't fit all the peppers in the skillet at once with breathing room around them, so hold on to that extra 2 tablespoons olive oil and</li>
<li>
Cook without stirring or moving the peppers for 5 minutes, letting the steam building up under the peppers' "domes" soften them. Flip the peppers with tongs and cook undisturbed for 5 minutes more, letting the skin of the peppers blister and char in the oil.</li>
<li>
Continue to cook and flip until the peppers are as soft and blackened as you'd like, anywhere from 5-10 minutes more.</li>
<li>
Repeat with the remaining peppers and olive oil as needed.</li>
<li>
Transfer the charred peppers to a plate and blanket generously with Parmesan cheese. Serve immediately.</li>
