As our resident vegetarian, I'm not necessarily one who goes crazy over the traditional corned beef dinner on St. Patrick's Day, if I'm entirely honest.

While I will gladly do up a corned beef in the Crock Pot every year for others, I tend to be in the much less traditional Irish fare. Think, Shamrock shakes.
