I'm not big on strict New Year's resolutions, but after a season of cookies and cocktails, I do typically look to pack more veggies into my meals come January.

From homemade soups to fresh salads, from grain bowls to skillet dinners, give me all the vegetables for breakfast, lunch and dinner - please and thank you!

If you, like me, could use extra nutrient dense veggies and superfoods now that the new year is upon us, these veggie packed meals are calling your name.
