Every Recipe We’re Making for Easter Brunch

Are you an Easter brunch or an Easter dinner kind of person? Among those who celebrate, I feel like some do it one way while many do it the other.

As a kid my family always generally served Easter dinner, but as a breakfast food lover, I'm very into an Easter brunch myself.

Now that it's my turn to call the shots, my husband and I always have friends over for an Easter dinner at which we serve brunch food. You're welcome.

It's the best of both worlds! We'll roast and glaze a ham, make Belgian waffles and quiche and serve brunch cocktails like mimosas or bellinis.

One year we skipped the ham entirely in lieu of eggs benedict made to order paired with a coconut cake with toasted coconut. Was it a hit? You bet it was.

Hosting is one of the great joys in my life so planning the menu for the next upcoming occasion is a great pastime for my husband and I.

We think about what we've made before that we loved, what our friends and family love, and we'll sprinkle in a few new things we want to try, too.

We're in prime Easter menu planning mode, so I am sharing every recipe we're making for Easter brunch this year...plus a few extras for good measure.

1. Chocolate Strawberry Brioche French Toast Recipe

I'm a sucker for a great French toast recipe and this one just screams Easter to me. (That could be because my birthday is usually near Easter and I always have a strawberry cake for my birthday!) With this French toast, thick brioche bread is soaked, toasted and then topped with strawberries and a chocolate coconut whipped cream that is decadent and delicious.

2. Cardamom Buns Recipe

These classic cardamom buns simply melt in your mouth. They're infused with cardamom and a touch of cinnamon, they're super soft and sweet without being too sweet. These buns make a perfect addition to brunch, but I also love them cozied up with a cup of coffee or tea. You see cardamom buns pop up a lot during the Christmas season, but they are just as at home on the Eater brunch table or all year long.

3. Harissa Goat Cheese Deviled Eggs Recipe

I don't believe I've ever been to an Easter celebration where deviled eggs haven't played some kind of starring or supporting role on the table. These deviled eggs will steal the show! Blended with goat cheese for an extra creamy, slightly tart flavor and harissa for a little kick, they are wildly flavorful. Mark my words. This is about to become your new favorite deviled egg recipe.

4. Smoked Salmon Avocado Cream Cheese Pastries Recipe

Tiny pastries topped with homemade avocado cream cheese, smoked salmon, fresh herbs, and capers, these tarts are the brunch appetizer you need to serve at every brunch you ever host from this point forward. If you're serving Easter dinner instead of brunch (or brunch for dinner like we do) these smoked salmon bites are equally as crowd-pleasing.

5. Broccoli Cheddar Zoodle Bake Recipe

I mentioned that we love serving quiche on Easter, but this year I'm going with this veggie-packed broccoli cheddar zoodle bake. It's loaded with fresh broccoli, zucchini and cheddar cheese making for a fresh, savory addition to your brunch menu. Use extra sharp cheddar cheese to really ramp up the flavor and don't forget a splash of your favorite hot sauce!

6. Nutella Pop Tarts Recipe

Easter brunch practically begs for the addition of something sweet and fun. These Nutella pop tarts check the box! Flaky pie crust is stuffed with chocolate then topped with Nutella ganache and colorful sprinkles. The kids will go crazy for these! To make them even simpler to make, skip the homemade pie crust and grab a box of store-bought crust and cut your prep time.
