Wondering how to roast Brussels sprouts? You've come to the right place! Roasted Brussles sprouts are actually one of my favorite dishes.

In fact, roasting is one of my favorite ways to cook vegetables. After the initial prep work, which is usually really easy, it’s a pretty hands-off way of cooking, and the clean-up is usually just one pan.

The best reason to roast any vegetable, including Brussels sprouts, is because of the flavor and texture. Roasting caramelizes the sugars in vegetables, giving you crispy, toasty, flavorful bits of veggie in every bite.

Simply put, roasting enhances all the flavors the vegetables come with naturally, and makes them even more delicious. (Roasted broccoli and roasted carrots are two other favorites!)

How to Roast Brussels Sprouts

Roasting Brussels sprouts is easy! I know it will quickly become your favorite cooking method.

A quick tip! If your Brussels sprouts are large, parboiling them first will ensure that the innermost parts are cooked without letting the outer leaves blacken while roasting.

So what is parboiling? Basically it's the proces of partially boiling things like meats or vegetables to allow them cook quicker and more evenly.

Here are the basic steps for how to roast Brussels sprouts:

  1. Preheat the oven to 425°F. Line a rimmed baking sheet with parchment paper for easy clean-up.
  2. Make sure your Brussels sprouts are washed, trimmed, halved, and completely dry. Wet veggies will steam instead of roast, which will make them mushy and prevent caramelization.
  3. Spread the Brussels sprouts out on the baking sheet, drizzle them generously with a good olive oil, and season with kosher salt and freshly ground pepper. If you want to add other seasonings, now is the time.
  4. Toss the Brussels sprouts with your hands until they are all thoroughly coated with oil and the seasonings are well distributed. Spread them out in a single layer.
  5. Roast in the oven until the Brussels sprouts are tender and have good carmelization - those crispy browned bits that taste so good.
  6. Serve immediately!
