This Nectarine Granola Yogurt Parfait is light and easy for breakfast any day of the week. So fancy and filling!

Typically served as a dessert, but also a wonderful treat for breakfast, parfait is a much loved combination of yogurt or ice-cream and fruit.

The word parfait actually is French for ‘perfect’, which pretty much sums up how good this dessert really is.

A traditional French parfait consists of egg yolk foam, whipped cream and other additions like fruit or nuts which are layered and frozen in a tall, thin mold.

American parfait is a little different, using layers of ice cream or yogurt alternating with nuts, fruits and granola, creating delicious layers. 

Using yogurt as opposed to icecream helps make parfait much healthier and is why you will often see if served as a breakfast item.

How to Make Healthy Yogurt Parfait

If you are aiming for a healthy treat,  it is important to consider the type of yogurt you use.

More often than not, yogurts are packed full of sugar that make them just as unhealthy as ice-cream, so don’t be fooled!

Aways read the label as it will help you determine if the yogurt you are looking to buy is actually a healthy option.

Many yogurts include lots of additives to flavor and sweeten them, so it is best to look for a yogurt that has a short ingredient list.

The ingredients on nutrition labels are listed by weight, so the order in which ingredients are listed is important.

If you see sugar in the first few ingredients you can be sure that it is quite an unhealthy yogurt.

The best yogurts include milk, plus the bacterial cultures needed to turn the milk into yogurt...and not much else!

Do bear in mind that sugar may be listed as sucrose, high fructose corn syrup, fruit juice, cane sugar and agave nectar. 

On the nutritional label you will also be able to find out what the suggested serving size is as well as the calories per serving.

Scanning through the label, you will also see macronutrients - carbohydrates, proteins and fats - listed as grams per serving as well as some micronutrients.

You will also be able to see the amount of sugar per serving, so it can help you determine which yogurts are healthier than others.

Choosing a yogurt with a minimum amount of sugar and lower amounts of carbs is the safest option; you will often find that the healthiest option is plain, unflavored yogurt which typically has about 10-15 grams of carbs per cup. 

When using yogurt in parfait, you will find that you will use a lot of sweet additions such as fruit, nuts and granola.

This is why plain yogurt is ideal - and because it is coupled up with sweet ingredients, you won’t even notice the yogurt isn’t sweetened!

That being said, you can always add a dash of vanilla for extra sweetness if you find the yogurt too tangy.

This recipe uses passionfruit pulp and nectarines which are both naturally sweet, so you shouldn’t need to sweeten the yogurt at all.

Nectarine Granola Yogurt Parfait Recipe

  1 Servings

Ingredients

  • 1/2 cup Plain Greek Yogurt
  • 1/2 cup Granola, use your favorite
  • 2 Nectarines, diced
  • Passion Fruit Pulp, from 2 Passion Fruit
  • Mint Leaves, (around a tablespoon)
  • Coconut Flakes, for garnish

Directions

  1. In a dessert glass or a boowl, add half of the granola. Layer with half of the yogurt, followed by half the nectarine and passionfruit pulp.
  2. Repeat until you have used everything up.
  3. Sprinkle mint leaves and coconut and lay a slice of nectarine over on top. Voila!
