Creamed spinach makes a delicious and healthy side dish that goes with just about anything - but it is typically made with milk or cream, meaning it is unsuitable for a vegan diet or for anyone who needs to avoid dairy.

That is, unless you decide to make this vegan creamed spinach, which is 100% dairy-free and delicious served alongside a meat-free meal. You could even serve it as a dip - it pairs up perfectly with these crunchy homemade tortilla chips.

You can use fresh or frozen spinach in this recipe. 
Our recommendation is to use fresh - the texture is better and frozen spinach can sometimes lead to runny results because it produces extra liquid. 
One way to avoid this if you want to use frozen spinach is to add the soy milk a bit at a time, rather than all in one go. This gives you more control over the final consistency. Do remember, though, that creamed spinach tends to thicken as it cools.

Vegan Creamed Spinach Variations

Made with onion soup powder, this recipe is nice and easy, plus it is full of flavor. But there are several ways you can make it even yummier!
Why not try:
  • stirring in vegan butter for extra richness
  • topping with a good handful of vegan cheese
  • switching the soy milk for coconut milk - it gives it a lovely, light coconut flavor
  • adding some nutmeg - it really brings out the flavor of spinach
  • throwing in some vegan bacon bits
  • sprinkling with nutritional yeast

Yes! Just freeze it into food-safe freezer bags so you have handy portions available for side dishes on busy evenings.

Vegan Creamed Spinach

    3 Servings

Ingredients

  • 1 1/4 cups Water
  • 1 package Onion Soup
  • 3 pounds Fresh Spinach
  • 1/2 cup Soy Milk, or another non-dairy milk

Directions

  1. Bring the water to a simmer in a medium sized saucepan and empty in the entire pack of onion soup mix. Stir well.
  2. Once the onion mix has completely dissoved, add the spinach.
  3. Cook over a medium heat for around 5 minutes, until the spinach is almost done.
  4. Reduce the heat to low and pour in the soy milk. Simmer for a few more minutes until the mixture has thickened. It is now ready to serve.
