Made with wholesome, plant-based ingredients, this simple vegetarian broth is full of flavor and nutrients. This recipe just goes to show that you don't need meat bones in order to make a tasty broth - healthy vegetables are more than up to the task!

This vegetarian broth recipe is designed to use up all that leftover veggie pulp you have when you juice vegetables. But there are lots of other things you can put into it too!

At the beginning of each week, start collecting all your veggie scraps in a bag - everything from carrot tops and peelings to cauliflower cores. Keep the bag in your freezer and add to it on a daily basis. You can even put in things like onion and garlic skin too!

By the end of the week, I guarantee you'll be amazed by just how much veggie waste was destined for the trash! Using all those scraps to make a rich vegetable broth is a great, environmentally friendly alternative - plus it saves you money.

There are lots of different ways to put homemade vegetable broth to use in the kitchen.

It makes the ideal base for everything from vegetarian soups to delicious sauces and gravies.

And there are quite a few recipes right here on this site that call for it, so it's good to know you can easily have a supply to hand whenever you need it.

This Vegetarian Shepherd's Pie recipe is a great example. A British comfort food typically made with lamb, this version uses veggie broth to simmer the vegetables, which are then poured into a casserole dish, topped with mashed potato and baked.

Another great vegetarian recipe to try is this wonderful Pasta Primavera. It is cooked right in the skillet, which means the pasta doesn't need draining or rinsing and all the starch goes into the sauce. This results into a lovely, creamy texture that makes this dish extra special.

Vegetarian Broth Recipe

    18 Servings

Ingredients

  • 9 cups Water
  • 2 cups Vegetable Juice Pulp
  • Soup Spices, like Rosemary, Bay Leaves, All-Spice and Thyme
  • Salt and Pepper, to taste

Directions

  1. Boil 9 cups of water in a large pot.
  2. Once boiling, add your leftover vegetable pulp, salt, pepper and your favorite spices. We tend to include rosemary, bay leaves, all-spice and thyme.
  3. Reduce the heat and simmer for about an hour.
  4. Either strain the broth or leave it chunky. You can store it in the fridge for up to 5 days or freeze up to 3 months.
