Strawberry Frosting Recipe
Amanda Powell | A Cookie Named DesireThere is nothing better than a creamy strawberry frosting. This is anything but your typical buttercream and will convert even the most adamant frosting haters.
Every year I make my daughter a birthday cake, we have strawberry somewhere in the cake. It’s been a tradition since her first birthday.
We’ve put it in the cake itself, in the filling, made strawberry frosting, and even decorated it in piles of fresh strawberries.
I am pretty much an expert in all things related to strawberries and cake at this point.
One of my favorite things to make is strawberry frosting. I love the beautiful pink hue and strawberry is such a nice change from the chocolate and vanilla frosting we usually eat.
What I love is that this has a lovely strawberries and cream taste to it without being overly sweet. It pairs well with pretty much every cake flavor there is.
Why You Should Use Freeze-Dried Strawberries for Your Frosting
Freeze-dried strawberries are my preferred way to make this frosting. It adds a natural beautiful hue to your frosting that intensifies over time.
The strawberry flavor infuses throughout the frosting without adding a ton of sweetness. Must like the color, the flavor also gets better over time.
Since we add the freeze-dried berries in a powdered state, it also allows us more control over the final texture.
Fortunately, most grocery stores now sell freeze-dried fruit like strawberries, but if you cannot find any, you can usually order some inexpensively from Amazon.
Can You Make Strawberry Frosting with Jam?
There are so many ways to make your frosting, including with jam. In fact, using jam was the primary way I would make this frosting for several years.
When making strawberry jam frosting, you need to keep in mind that you are adding more liquid to the frosting which will affect the end texture.
You can work around this by cooking down your jam a little more or straining it with a cheesecloth to remove more of the moisture.
Jam is also very sweet on its own, so you need to take sugar levels into consideration to avoid a cloyingly sweet frosting.
A pinch or two of salt can temper some of the sweetness, but it is not a cure-all for overly sugary frosting.
How to Store Leftover Frosting
Start by storing your leftover strawberry frosting in an airtight container. I prefer to store it in plastic freezer bags for easy piping later.
- You can store the frosting at room temperature for up to 48 hours.
- You can store your leftover frosting in the refrigerator for up to a week.
- If you store your frosting in the freezer, it should last roughly a month.

Strawberry Frosting Recipe
Ingredients
- 1 1/2 ounces Freeze Dried Strawberries
- 1/2 cup Unsalted Butter, room temperature
- 3 cups Powdered Sugar
- 1/4 teaspoon Salt
- 1/2 teaspoon Lemon Juice, (optional)
- 1 1/2 teaspoons Pure Vanilla Extract
- 3-4 tablespoons Heavy Cream
Directions
- Put your strawberries to a food processor and pulse until the strawberries become a fine powder.
- Place your butter to a mixer and beat until smooth.
- Add your powdered sugar one cup at a time, beating well between each addition.
- Add in the strawberries and salt and beat well.
- Beat in the lemon juice and vanilla extract and beat well.
- Mix in the heavy cream one tablespoon at a time until you reach your desired consistency.
- Allow the frosting to sit for a couple of minutes before enjoying.
