Don’t you just love when you make healthy food actually so tasty that people who claim they “don’t like healthy food” have to LITERALLY eat their own words? It’s pretty much my favorite game ever, especially with this shrimp and avocado salad because it is ALWAYS A WINNER.

I mean it’s almost cheating to bring it to a match of “make people who don’t like healthy food actually like it” because it’s just THAT good. No one recipe stands a chance against juicy, charry shrimp kissed with smoke that dance down into your hungry belly with sweet watermelon, creamy avocado, salty feta and that spicy-yet-sweet-‘n-tangy honey lime dressing that is just pretty much perfect.

I was first inspired to make a watermelon and feta recipe with the Summer maple lime watermelon zoodle bowls last year and knew that combination had to come back ‘round the bend in 2019.

Have you ever tried this combo? Feta cheese is naturally salty and a little tangy and watermelon is fresh, juicy and sweet and the marriage of combinations could not be better or more crave-able.

Especially when sweaty-person you comes inside from a hot Summer day. Pour yourself a healthy strawberry watermelon smoothie and grab a bowl of grilled shrimp avocado salad with watermelon and you are SET for a refreshing food experience!

How to Grill Shrimp

Shrimp is probably the easiest thing EVER to grill! You simply have to heat your grill to a medium heat, toss the shrimp with olive oil and then cook! Shrimp cook VERY quickly, and jumbo shrimp only need about 2-3 minutes per side max!

How to Know When Shrimp is Cooked?

Raw shrimp is shiny, wet and translucent. The color will be gray-ish. When they are cooked through, they will be opaque and pink-ish. They will also curl into little “C” shapes!

What happens if you overcook shrimp?

Shrimp IS easy and quick to cook, but overcooked shrimp are not very yummy to eat. They become rubbery and chewy and texture isn’t one that you will want to have in your salad with shrimp or any meal!

You might first misjudge this grilled shrimp avocado salad and think that’s not very filling on account of it being mostly watermelon. Considering watermelon is just water, it’s not the most satiating of fruits out there. BUT, avocado? Now that is one fiber-packed, heart-healthy powerhouse that keeps you FULL.

So, don’t go skimping out on that green goodness because the avocado is going to help keep your hungry belly feeling satisfied, but without feeling heavy.

Shrimp Avocado Salad with Watermelon

    2 Servings

Ingredients

  • 5 ounces Jumbo Raw Shrimp, peeled and deveined
  • 1 teaspoon Olive Oil
  • 2 cups Watermelon
  • 1 Avocado, cubed
  • 1/4 cup Feta Cheese, crumbled
  • 1 tablespoon Fresh Mint, thinly sliced
  • Sea Salt
For the dressing:
  • 2 teaspoons Honey
  • 1/2 tablespoon Olive Oil
  • 1/2 tablespoon Fresh Lime Juice, plus additional for garnish
  • 1/2 tablespoon Jalapeno Tabasco Sauce

Directions

Preheat your grill to medium heat.

Toss the shrimp with the oil and sprinkle with a pinch of salt.

Grill until opaque and pink, about 1 – 2 minutes per side, maximum. Add into a large bowl.

Into the bowl, add the cubed watermelon, avocado, feta cheese and mint and toss together.

In a small bowl, whisk together all the dressing ingredients and pour into the salad, mixing well.

Add one more squeeze of fresh lime juice on the salad and season to taste with salt.
