Buffalo Chicken Puff Pastry Pizza is the epitome of easy dinner. Grab a rotisserie chicken on your way home from work, you're gonna need it!

Can I just tell you how I feel about pizza for second? Pizza is life! I’m serious, on my personal Facebook page I literally have this saying as my caption with a little slice of pizza.

I would probably actually eat it every single day if it were offered to me but you know eating too much isn’t good for my weight, so I definitely can’t indulge everyday!

So as we are getting close to fall there are a lot of pumpkin recipes hitting the internet. I don’t think I’m quite ready to eat pumpkin, but I do enjoy looking at the recipes and seeing what I want to make coming this fall season such as this pumpkin snack cake with cream cheese frosting!

You also see lots of back to school recipes hitting the internet this time of year as well. Well, I’ve got you covered with this buffalo chicken puff pastry pizza.

It’s super simple. It’s easy. You use a leftover rotisserie chicken and some flavoring and a slab of puff pastry and you’re good to go.

I made this around the same time that I made puff pastry barbecue chicken pizza. Honestly I believe I like this one better, just because it has a little spice in it with the buffalo sauce.

My kids, on the other hand, really enjoyed the puff pastry barbecue chicken pizza because you know it has barbecue sauce in it! They sure do love their sauces!

The combinations with using rotisserie chicken is endless, but I decided to make it with buffalo sauce. Then of course I had to add some ranch dressing and celery!

It reminds me of when you go to a restaurant and you get buffalo chicken wings. Wings typically come with these popular sides when you order them, so I thought it would be a good combination to add on top of the pizza.

The celery on top give it a nice little crunch when you take a bite which I kind of enjoyed!

Buffalo Chicken Puff Pastry Pizza Recipe

    6 Servings

Ingredients

  • 1 sheet Puff Pastry, thawed
  • 1 1/2 cups Leftover Rotisserie Chicken
  • 1/2 cup Buffalo Wing Sauce
  • 1/4 cup Tomato Sauce
  • 1/4 teaspoon Garlic Powder
  • 1/4 cup Red Onion, chopped
  • 1 cup Cheese
  • 1/4 cup Ranch Dressing, for garnish
  • 1/4 stalk Celery, chopped (for garnish)

Directions

  1. Preheat oven to 425°F. Line two baking sheets with parchment paper. Set aside.
  2. In small bowl add chicken and buffalo sauce. Mix together. Set aside.
  3. Roll out pastry on a lightly floured surface to a large rectangle and place each on baking sheet.
  4. Spread the tomato sauce evenly on pizza.
  5. Sprinkle garlic powder on pizza.
  6. Top with cheese.
  7. Sprinkle the chicken evenly over the pizza.
  8. Top with red onion.
  9. Bake for 14-16 minutes or cheese is melted, and crust is golden brown.
  10. Top each pizza with a drizzle of ranch and sprinkle with celery. Serve and ENJOY!
