Okay, so this is not a peanut butter recipe because I’m taking a short break from peanut butter recipes, but this recipe does include nuts!

If you count on me to provide you generally nutty recipes, then these Raisin Cashew Fudge Drops still count because… cashews!

While I’m diehard for peanut butter, and it’s my favorite food through and through, I also just love nuts in general, and there isn’t a single nut I’d turn down. What about you?

Cashews are my #1. These Raisin Cashew Fudge Drops jumped out at me in a magazine recently, and I couldn’t wait to make them.

I have such a lengthy list of things I want to make, and yet these managed to jump to the top of the list. I couldn’t wait!

I think they called out to me for a few reasons, but primarily that they’re so incredibly simple, quick to make from start-to-finish, but also that each ingredient is well-selected and well-represented!

Just a few simple ingredients and a few easy steps to make up an exceptional homemade candy!

Funnily enough, I don’t even like raisins, but there are two exceptions: in oatmeal cookies, and when doused in chocolate. Those are the only two scenarios where I like raisins.

Give me an ultra-chewy, super buttery, thick oatmeal cookie, and I’ll want it to have a ton of raisins (um, or butterscotch chips). When I’m at a grocery store that has a nice bulk foods section and I spot chocolate-covered raisins, I cannot resist stocking up.

There’s something super addicting about those little devils.

And throw in my favorite nut? I’m totally in. I love these little nuggets.

It’s not just raisins and cashews coated in melted chocolate…. no, it’s actually fudge! The raisins and cashews are nestled in pools of fudge.

It’s a ‘quick fudge’, that’s what I always call it… milk chocolate chips melted with sweetened condensed milk – it’s the easiest way to make fudge.

This Nutella Fudge is a good example of how it works! ‘Quick fudge’ is also what fills the center of these White Chocolate Fudge Puddles.

Raisin Cashew Fudge Drops Image

    36 Servings

Ingredients

  • 12 ounces Semisweet Chocolate Chips, or milk chocolate chips
  • 14 ounce can Sweetened Condensed Milk
  • 1 tablespoon Light Corn Syrup
  • 2 teaspoons Pure Vanilla Extract
  • 2 1/2 cups Cashews, salted, coarsely chopped
  • 2 1/2 cups Raisins

Directions

  1. In a large saucepan over medium heat, combine the chocolate chips, sweetened condensed milk, and corn syrup.
  2. Cook and stir until mixture is melted and smooth.
  3. Add vanilla.
  4. Remove from heat and stir in cashews and raisins.
  5. Drop by rounded teaspoonfuls onto parchment paper or wax paper-lined baking sheets.
  6. Allow to set. Store in cool, airtight containers.
