Mint Chocolate Brownie Bites are the perfect poppable treat! Stash some in the fridge for an emergency indulgence.

Can we talk about the look your kids give you when they’ve finally pushed you to the brink of insanity?

Like, I’m just over it. I consider myself to be a patient and fairly delightful person, but every few months I reach the end of my rope.

Naturally, this normally occurs after days of the children fighting and picking at each other – “he looked at me funny,” “she touched me with her pinky toe,” – topped off with the normal stress of being a human who has to pay bills and provide shelter to other humans.

Honestly, we don’t say it enough – life is freaking hard.

And then I’ve got these two tiny people, arguing all the livelong day, completely ruining my trip to Target and we all KNOW THAT US MIDDLE CLASS WHITE LADIES TAKE OUR TRIPS TO TARGET SUPER SERIOUS.

Ya mess with Target, ya mess with something deep inside my soul. It is what it is.

So what happens is, I finally give my kids what I call a “Come to Jesus/DO YOU UNDERSTAND THAT I OWN YOUR LIFE” meeting. And what I need you to understand is that I don’t yell during such an occasion.

Instead, I lean in. I whisper. My face takes on the appearance of a potential serial killer.

I mean, I’m just saying that during these sessions, I am slightly afraid of my own self. My husband literally just clears the premises, which to be honest, is a wise move on his part.

Much respect, husband. You’ve got life figured out.

But my children?

THEY HAVE THE NERVE TO LOOK AT ME LIKE I’M THE CRAZY ONE.

Ummm…okay sooooo…first of all? You guys did this. So I am zero percent having those confused “are you crazy” faces.

Do you know what’s crazy? Fighting over a fart.

So there ya go. Kids, man. I love them, but sometimes I really need twenty-eight brownies and a shot of vodka. And when that happens, I want the good stuff.

Brownies, I mean. Cheap vodka is fine, no complaints here.

This brownie recipe is pretty darn phenom. Fudgy and dense, there are no crazy ingredients and they whip up with a bowl and a spoon. Easy peasy.

For this batch, I baked them into little bites and added a minty buttercream because buttercream is life and I won’t apologize for that.

Stash them in the fridge for one of THOSE DAYS. You won’t regret it!

Mint Chocolate Brownie Bites Recipe

    24 Servings

Ingredients

For the Brownies:
  • 1 stick Salted Butter, melted
  • 1/2 cup Unsweetened Cocoa Powder
  • 1 cup Granulated Sugar
  • 2 large Eggs
  • 1 1/2 teaspoons Pure Vanilla Extract
  • 1/2 teaspoon Mint Extract
  • 2/3 cup All-Purpose Flour
  • 3 Milk Chocolate Bars, (1.55 ounces), melted in the microwave
For the Frosting:
  • 1 stick Salted Butter, slightly softened
  • 1/2 teaspoon Mint Extract
  • 1/2 teaspoon Pure Vanilla Extract
  • 1/3 cup Heavy Cream
  • 2 cups Powdered Sugar
  • 2 drops Green Food Coloring

Directions

For the Brownies:

  1. Preheat oven to 350°F. Spray 24 mini muffin cups with nonstick spray and set aside.
  2. In a large bowl, whisk butter and cocoa powder together until cocoa is dissolved and mixture is thick.
  3. Stir in sugar until combined.
  4. Stir in eggs, mixing until combined.
  5. Add vanilla and mint extracts.
  6. Add flour, stirring just until no white streaks remain in batter.
  7. Fold in melted candy bars.
  8. Use a small cookie scoop to divide batter in prepared muffin.
  9. Bake for about 12-15 minutes, or until a toothpick inserted in the center comes out with fudgy crumbs, but not raw batter.
  10. Let cool slightly, about 15 minutes, then use a sharp knife to loosen brownie bites and remove from pan. Let cool completely.

For the Buttercream:

  1. In the bowl of your mixer, beat butter, extracts, and cream on medium-low speed until combined.
  2. With the mixer on low, slowly add powdered sugar, beating until just barely mixed. Add food coloring and increase speed to high – beat for one minute.
  3. Generously frost or pipe frosting on brownie bites.

To Serve:

  1. Sprinkle with chocolate sprinkles or chocolate cookie crumbs, if desired.
