Strawberry Dream Cookies are exactly that – a dream. With a delectable frosting and all the sprinkles you could handle, they’re Valentine’s Day perfection.

I am thinking that I don’t hate the idea of getting rid of Valentine’s Day and replacing it with an extra Thanksgiving.

February is such a weird month. My skin is all pale and itchy, everything is cold and boring, and the one holiday we get is kind of super lame.

Unless you count the Super Bowl, which is KIND of a holiday, but with hot wings and beer instead of turkey, which I’m honestly okay with.

If only we could do away with the whole football part of it, it might just be the perfect day.

But no. Here we are with Valentine’s Day. And spoiler alert – Valentine’s Day isn’t here to be our friend.

Here we are with our itchy winter skin, thick sweaters, and chicken pot pie bodies, and Valentine’s Day is all…YOU’RE NOT TRULY LOVED UNLESS SOMEONE SENDS YOU FLOWERS, YOU LONELY, UNLOVED, ITCHY PERSON.

Call me crazy, but a day full of mashed potatoes, casseroles, and champagne isn’t such a bad idea in comparison.

Unfortunately, I don’t think that I have what it takes to make this happen. Have you seen how hardcore they market this Valentine’s Day business lately?

The Christmas clearance isn’t even cold yet and here are the heart shaped boxes of chocolates, front and center.

WE ARE ALL LONELY AND PALE AND MADE BAD FOOD CHOICES LAST MONTH. WE GET IT. STOP RUBBING IT IN, VALENTINE’S DAY.

I mean honestly, what a jerk.

I have heard the saying, “If you can’t beat them, join them,“ and I suppose there might be something to it. So my recommendation for “joining them” is making a batch of these super easy (and totally delicious) pink cookies slathered with frosting.

And then spend Valentine’s Day eating them all while binge-watching old episodes of Grey’s Anatomy.

I’m no expert, but really think I’m on to something.

Strawberry Dream Cookies Recipe

    36 Servings

Ingredients

For the Cookies:
  • 8 ounces Cream Cheese, softened
  • 1 stick Salted Butter, softened, 1/2 cup
  • 1 large Egg
  • 1 box Strawberry Cake Mix
  • 1/3 cup Powdered Sugar
For the Frosting:
  • 12 tablespoons Salted Butter, softened, 3/4 cup
  • 4 ounces Cream Cheese, softened, half a block
  • 1/3 cup Frozen Sweetened Strawberries in Syrup, thawed and pureed
  • 2 teaspoons Lemon Juice
  • 4 cups Powdered Sugar
For Topping:
  • Sprinkles

Directions

  1. Preheat oven to 350°F. Line baking sheet with parchment paper and set aside.
  2. In the bowl of your mixer, beat cream cheese and butter on medium speed, scraping sides of bowl as needed, until combined and smooth.
  3. Beat in the egg.
  4. Add cake mix and beat on medium until a smooth dough forms.
  5. Using a medium cookie scoop, scoop dough into balls and roll in powdered sugar. Place on prepared baking sheets, roughly 2 inches apart.
  6. Bake for 10 minutes, or until edges and bottoms of cookies are just barely golden.
  7. Let cool on baking sheet for 5 minutes before removing to wire rack to cool completely.

Prepare frosting:

  1. In the bowl of your mixer, beat butter and cream cheese on medium speed until smooth.
  2. Add pureed strawberry mixture and lemon juice, beating on low until smooth.
  3. Add powdered sugar and continue beating on low until JUST combined.
  4. Increase mixer speed to high and beat for one minute.
  5. Generously frost cookies and top with sprinkles, if desired.
