A delicious entrée, this Honey Mustard Chicken with Bacon is impressive enough for dinner party guests. Serve it with a starch and steamed greens for a wonderful meal!

I have recipes in my heart that are pure childhood comfort to me. Recipes like this chicken.
My entire life I have hated creamy sauces. I can’t deal all that well with dairy, let alone eat a sauce that’s 9 parts cream and 1 part flavor.

Not even when said cream is in ice cream (gasp!).
My grandma grew up on a farm in Bavaria, close to the Czech border, during World War 2.
Her mom cooked a hearty German countryside diet - which must have been rather heavy. My aunt still claims one needs to fast for 2 weeks pre AND 2 weeks post a trip visiting our family there.
Gran was never one to enjoy huge hunks of meat in creamy sauces. She preferred the interesting. 
The more dainty. Things like Pork Tenderloin with Apple Bacon Compote.
And the recipe I’m sharing today too is the kind of food she whipped up in her own countryside kitchen some 50 years later, when I spent all my free time on my grandparent’s farm.

I cannot remember her ever making a sauce that had a ton of cream in it. She’d gather the cream from the fresh milk and churn it into butter instead - definitely not to be wasted on creamy sauces.
This honey mustard chicken with bacon is what she would have served on a Sunday, after church. She’d drive home by car and grandpa would walk the mile back home with me, giving Gran a few extra minutes in the kitchen.
The sauce is rich, yet almost delicate. There is zero cream to be found in it.
The bacon adds a deep, smoked flavor and the rosemary infuses some earthy herbal vibes into the dish.
I love using both smooth and whole grain mustard, as I find it adds a more interesting texture. Don’t worry if you don’t have the right mustards though - you can use any you love the flavor of, and it will create an amazing sauce.

Try to follow the recipe and add the honey right in the end after boiling the sauce - the chances of it getting too hot and making the sauce bitter are too high.
Mashed potatoes and tender green beans make a great accompaniment to this chicken, if you’re wondering.

Honey Mustard Chicken with Bacon Recipe

    4 Servings

Ingredients

  • 1 tablespoon Oil
  • 4 Chicken Breasts
  • 1 1/2 ounces Bacon, smoked, roughly chopped
  • 1 large Yellow Onion, chopped
  • 2 cloves Garlic, minced
  • 3/4 cup Chicken Broth
  • 1 tablespoon Smooth Dijon Mustard
  • 2 tablespoons Whole Grain Dijon Mustard
  • Salt and Pepper, to taste
  • 2 sprigs Rosemary
  • 2-3 tablespoons Honey

Directions

Brown the Chicken: 
  1. Heat the oil in a wide skillet over medium-high. Place the chicken breasts in the hot pan and brown well on each side (it doesn’t have to be cooked through yet, just nicely browned). Remove from the pan and cover on a plate.
Sauté the Aromatics: 
  1. Bring the pan back up to medium-high heat (do not drain or wipe the pan! That’s delicious flavor in there!) and add the bacon. Cook for a minute, then stir in the onion and garlic. Sauté until softened, about 1 minute.
Deglaze the Pan: 
  1. Pour the chicken broth into the pan and bring to a boil, scratching the browned bits off the bottom. Stir in both mustards and season with salt and pepper.
Cook the Chicken: 
  1. Add both the rosemary sprigs and the chicken to the pan with the sauce and cover with a lid. Gently simmer for about 6-8 minutes (if you have very thick chicken pieces, it might take longer), turning the chicken once halfway through. Once the internal temperature of the thickest part of the chicken registers 165°F, remove it from the pan onto a clean serving platter and cover.
Finish the Sauce: 
  1. Bring the sauce to a boil, then cook until reduced by 1/3. Remove the rosemary and stir in the honey. Serve over the chicken.
