This Baked Cajun Mahi-Mahi Dinner is a healthy way to get dinner on the table. And it only uses one dish!

It's a new year, which means we all are trying to eat a little healthier. Fish is always a go-to when I'm trying to eat healthy.

I also always keep fish in my freezer as an easy go-to meal. Mahi-mahi season is over here in Florida; however, my freezer still has quite a few filets left from a successful fishing season.

We enjoy mahi every other week for dinner. I almost always prepare it with Cajun seasoning and serve with rice, quinoa, or my favorite, couscous.

I like to make fish either on a Friday or Saturday night. It's a simple meal to make and since we never have leftovers it's perfect for the weekend.

We love to eat leftovers for lunch throughout the week, and let's face it--who likes to eat fish the next day? You also don't want to be known as the "stinky fish person" at work.

That was always one of my biggest pet peeves when I worked in the corporate world. It should be against the law to reheat any form of seafood in the microwave. I digress...

If you’re looking for a new way to cook mahi-mahi (or any steak like white fish) then I think you'll love this Cajun style. A trinity mix of red, yellow, and green bell peppers as well as onions and fresh tomatoes are what makes this meal complete.

The Andouille sausage brings a little heat to the topping. If you’re on a low carb diet, you could easily make this without any starchy sides and just roast additional veggies.

Pro tip: dice the tomatoes, bell peppers, onions, and Andouille sausage the night before and store in a sealed container in the refrigerator.

Once you’re ready to make the meal, just pull out the chopped veggies and you've just save a good 15 minutes of dinner prep time.

I also don't worry about thawing the fish. I bake it from frozen and it's completely fine to do just that.

You can eat the fish, veggies, and sausage just as it is, or serve it on a bed of brown rice or quinoa. I typically throw in a pan of veggies to roast while the fish dinner cooks.

Baked Cajun Mahi-Mahi Dinner Recipe

    4 Servings

Ingredients

  • 4 Plum Tomatoes, diced
  • 1/2 Red Bell Pepper, diced
  • 1/2 Green Bell Pepper, diced
  • 1/2 Yellow Bell Pepper, diced
  • 1/2 medium White Onion, minced
  • 2 links Andouille Sausage, diced
  • 3 tablespoons Olive Oil, divided
  • 2 teaspoons Cajun Seasoning, divided
  • 1 frozen fillet Mahi-Mahi, large

Directions

  1. Preheat oven to 425°F.
  2. In a 9 x 12 glass-baking dish, place the diced plum tomatoes, bell peppers, onion, and Andouille sausage.
  3. Drizzle one tablespoon of the olive oil and sprinkle one teaspoon of the Cajun seasoning on top.
  4. Mix well and then push to the sides of the dish leaving a large hole for the mahi-mahi.
  5. Drizzle one tablespoon of olive oil on the empty spot in the baking dish. Then add the large frozen mahi-mahi filet to the dish (skin side down).
  6. Drizzle the remaining one tablespoon of olive oil on top and sprinkle the remaining one teaspoon of Cajun seasoning on top of the fish.
  7. Place aluminum foil on top of the glass-baking dish and bake for 25 minutes.
  8. Remove the aluminum foil from the dish and bake for an additional 15 minutes until internal temperature reads 165°F.
  9. Remove from the oven, carefully cut the fish in 3-4 pieces depending on the size of the filet. Place fish on plates and top with tomato, pepper, and sausage mixture. Enjoy immediately.

Notes

  • I like to serve this meal with a side of rice or quinoa and roasted asparagus spears.
