Kick up your summer with a few root beer float popsicles. These tasty treats will cool you down and bring you back to your childhood.

There isn’t anything I love more than a popsicle when I am outside on a hot day. Something about it makes it feel so much more refreshing than a drink or a plain scoop of ice cream.

Last summer I introduced my daughter to root beer floats for the first time. They used to be a childhood favorite of mine and I wanted to share the experience with her. Sadly, she hated it and only wanted to eat the ice cream and left the leftover creamy root beer for me.

It hurt. It really hurt.

This year I didn’t even try. I had a root beer float and got her something else without a word. But then she saw me making myself a batch of root beer float popsicles and suddenly she was interested.

Suddenly, root beer floats were interesting again and she wanted to give them another shot. So, I started off with the root beer float popsicles I just made. Success!

She said she loved it and wanted these popsicles all the time. Then we moved on to root beer floats. Good, she could finish half of one, but decided that the popsicles were the true winners.

Which is just perfect for me because now it means I don’t have to return my child for a new one (I joke, I joke!!). What it does mean is that we can create some new memories together while we make batch after batch of popsicles and spend time together this summer.

Root Beer Float Popsicles Recipe

    12 Servings

Ingredients

  • 2 cups Root Beer, mostly flat
  • 1/2 cup Vanilla Ice Cream

Directions

  1. Pour your root beer into a cup and leave uncovered in the refrigerator for at least 2 hours. This is to remove some of the carbonation which will create air bubbles in our popsicles, leaving them crumbly. If you have some carbonation left, that is okay
  2. Evenly divide the ice cream among your popsicle molds. Top with the root beer and gently stir a little. Much of the ice cream will float back to the top, but you should still have plenty throughout to give the root beer a touch of creaminess.
  3. Freeze for at least 4 hours, preferably overnight.
  4. Gently pull out the popsicles from the molds and keep frozen in an airtight container.
