I am lucky to have parents who grew up overseas. My parents grew up in Greece, but also lived in Hungary and Macedonia.
Naturally, the type of food I ate growing up then was traditional, old-school Greek food and Hungarian food.
I appreciate these cuisines so much more as an adult than I did as a kid. Growing up, I just wanted "normal" food.
In other words, all the foods that would make a kid’s heart sink. We had a strict clean plate policy in my house, so I had no choice but to eat everything I was served, but they couldn't stop me from crying during my whole meal.
As an adult, I look back at my young self and think how stupid. My mom was a great cook and I should have appreciated the flavors and the effort.
But as a parent, I know that kids just don't think that way. I do serve my kids some of the exact same foods from my childhood, but my goal has been to make them more kid-friendly and to streamline each recipe.
Both have the same basic flavors as my mom's recipes, but they take a fraction of the time to prepare. The ethnic flavors are present enough for me, but mild enough for my kids.
This paprikash recipe is no exception. For this I used pork instead of the traditional chicken. I also added gnocchi to my paprikash to make it a complete, one-pot meal.
I think the potato gnocchi compliment the dish really well. This is a very family-friendly, timesaving meal that will bring a little international flair to your dinnertime!
