For some reason, certain foods have been deemed “romantic.”

Steak. Shrimp. Pasta and champagne. Who even makes these decisions, is what I want to know.

Was there a meeting on this that I missed? Because honestly, nothing holds the keys to my heart like a chili dog and some crispy French fries.

Can’t we make a new list of romantic foods? And then on every Valentine’s Day, we can go on dates where we eat nachos and chili dogs and drink beer in our yoga pants.

Because nothing says I love you like heartburn, cozy pants, and bad decisions, am I right?

I live in a small town, and Valentine’s Day around here is a complete nightmare. Hoards of nervous teenagers line up outside Olive Garden and Red Lobster with their dates, causing wait times of at least two hours.

I am just saying, there is nothing romantic about me after I’ve waited two hours to eat a few crab legs. My husband and I have learned that staying home is the best way to ensure that we don’t end up divorced, as I am not a very pleasant hungry person.

So we put the kiddos to bed a bit early, pick up some take-out, and enjoy it in front of a rented movie like the sensible older people that we are.

I do normally try to plan a special dessert at least, and I usually share it with the kiddos as well. We all love strawberries, and a few years ago my husband bought me some chocolate covered strawberries that were the best I’d ever had.

Instead of just having a chocolate coating, they also had a creamy white candy coating them, much like the filling in a cherry cordial.

I decided to attempt to replicate them at home, and the results were absolutely perfect.

If these don’t tell someone you love them, I don’t know what will. Enjoy!

Homemade Strawberry Cordials Recipe

  24 Servings

Ingredients

  • 24 large Strawberries
  • 8 tablespoons Salted Butter, Melted
  • 1/2 teaspoon Pure Vanilla Extract
  • 3 cups Powdered Sugar
  • 4 tablespoons Light Corn Syrup
  • 16 ounces Chocolate Almond Bark

Directions

  1. Wash and dry strawberries thoroughly. Line a large baking sheet with wax or parchment paper and set aside.
  2. In the bowl of your mixer, beat butter, powdered sugar, vanilla, powdered sugar, and light corn syrup until combined. Stop the mixer and knead the mixture with your hands until a soft dough forms.
  3. Cover bowl with a damp towel. Working with about a Tablespoon at a time, roll dough into a ball and flatten in the palm of your hand. Wrap around a strawberry, leaving the stem and the top 1/4 of the strawberry uncovered. Set aside. Repeat until all strawberries are covered.
  4. Melt chocolate coating according to package directions. Dip each strawberry in the chocolate coating, allowing the excess to dip off. Place strawberries on lined baking sheet to set.
  5. For best results, let strawberries sit overnight so the flavors can combine.
