We visit this little divey pizza place a couple times a month and it is DEFINITELY not for the atmosphere. Like, when we are there I can’t stop looking at the door to the kitchen that is begging for someone to scrub it, or the dust on the ceiling vents, or the line to the cash register that falls inconveniently in exactly the same spot as the main traffic route to and from the kitchen. So when you are trying to pay for your food, you constantly feel like you are in the way.

In short, that place is a hot mess.

But they have this salad.

OHHHHH mah gah. This salad.

It’s like the Greek salad to end all Greek salads.

The peppers and onions are crisp and fresh; the blend of lettuce is exactly perfect. The feta cheese is perfectly tangy and brine-ey, and the chicken is coated in chopped oregano and other herbs. It is so dang good that I can totally overlook the atmosphere until I’m gone. And although my Greek salad recipe is ON POINT (the dressing, ya’ll. SO good) theirs is still better. It just is!!!

I’m better at breakfast though. So I added the things about that salad that I adore to some thick slices of toast with a runny egg. My favorite part about this whole thing? Is the whipped feta. Have you ever whipped feta? It’s basically like the greatest thing (besides that Greek salad I was talking about) to ever happen to feta cheese.

I opted for some lightly cooked spinach with these toasts, but if spinach is not your thing, try pepperoncini or sliced olives. You could even cook a few onions or peppers! And honestly, this doesn’t have to be breakfast. It’s pretty perfect no matter what time of day you partake.

Bonus: If you leave off the egg, it’s also a pretty awesome appetizer.

Whipped Feta Breakfast Crostini Recipe

    4 Servings

Ingredients

  • 6 ounces Whipped Cream Cheese
  • 4 ounces Crumbled Feta Cheese
  • 1/2 Baguette
  • 6 ounces Fresh Spinach
  • 1 tablespoon Olive Oil, Plus more for serving
  • 2 Roma Tomatoes, Sliced
  • 4 Eggs
  • Salt and Pepper, To taste

Directions

  1. Preheat the oven to 400°F.
  2. Place the cream cheese and feta cheese in the bowl of your stand mixer (or use a hand mixer) and using the whisk attachment, let it mix on high until you have a nice fluffy spread, about 1-2 minutes.
  3. Slice the baguette diagonally and place the slices directly on the oven rack. Bake for about 3 minutes (just long enough to toast; note that the toaster oven also works great for this).
  4. Place the spinach in a large skillet. Drizzle 1 tablespoon of the olive oil over it and cook over medium high heat for 1-2 minutes, until it is just nicely wilted. Set aside.
  5. Cook your eggs to temp. Mine are poached! If you’d like to poach your egg, please see the post for a link to an easy poached egg recipe. You can use over well, easy, medium — however you like.
  6. Assemble. Spread each piece of toast with the whipped feta. Top with spinach and tomato slices. Drizzle with more olive oil and add your egg. Sprinkle with salt and pepper.
