Baked donuts have become a thing for us recently. Our family has always loved donuts — who doesn’t? — but I finally purchased a donut baking pan and now we are crazy for them.

Making them at home is actually easy and much cheaper than buying them every weekend at the store. When my daughter had a sleepover recently I baked these lemon donuts with chocolate glaze to serve the girls in the morning. They adored their sweet treats and I couldn’t believe how easy they were to make!

I swear, the minute you make these at home you too will wonder why you haven’t been making them all along. The gist of them is that you whip up a simple batter, much like making cookie dough, in one bowl. Then you fill the batter with lots of delicious, fragrant lemon zest. You know I am a devotee of Meyer lemons, but regular lemons will work just fine if you don’t have those on hand.

Then you drop the batter into the donut pan and bake them up! Since they are so small the baking time is not long. The cooling time isn’t long either. I chose to bake them up fresh in the morning and dip them in the melted chocolate once they were cooled. The entire process took about 20 minutes. After that they were ready to eat!

To make these a truly convenient breakfast food, make the batter the evening before. It will keep overnight in the refrigerator without fuss. In the morning let it sit at room temperature for about 10 minutes to take the edge off.

Of course, you can also design your topping if you don’t want to dip them in chocolate. Vanilla glaze, lemon glaze, or a generous dusting of powdered sugar would also work well and taste amazing. No matter how you choose to dress them up, these will instantly become your new favorite breakfast treat.

Lemon Donuts with Chocolate Glaze Recipe

    6 Servings

Ingredients

  • 1 cup All-Purpose Flour
  • 1 teaspoon Baking Powder
  • 1/2 teaspoon Baking Soda
  • 1/2 teaspoon Kosher Salt
  • 1/2 cup Granulated Sugar
  • 1 large Egg
  • 1/2 cup Buttermilk
  • 2 tablespoons Butter, Melted
  • 2 teaspoons Lemon Zest
  • 1 teaspoon Lemon Juice
  • 1 teaspoon Pure Vanilla Extract
For the Glaze:
  • 4 ounces Semisweet Chocolate, Finely chopped
  • 2 tablespoons Heavy Cream
  • Chocolate Sprinkles

Directions

  1. Preheat the oven to 350°F. Lightly spray a donut pan with cooking spray.
  2. In a large bowl mix the flour, baking powder, baking soda, salt, and sugar. In a smaller bowl beat the egg, buttermilk, butter, lemon zest, lemon juice and vanilla together. Pour the wet ingredients into the dry ingredients and stir well until smooth.
  3. Drop the batter into the batter into the donut pan by the tablespoonful and bake for 10 to 12 minutes, or until the donuts are risen and set and lightly golden around the edges. Remove them from the oven and allow them to cool in the pan for one minute. Then move them to a wire rack to cool completely.
  4. Make the glaze while the donuts are cooling: Add the chocolate to a microwave-proof bowl with the heavy cream. Warm in 30-second bursts until the chocolate can be stirred smooth. Stir well until the chocolate is smooth and glossy.
  5. Dip the top of the donuts in the glaze and return them to the wire rack and sprinkle with the chocolate sprinkles. Allow the chocolate to set and enjoy!
