I have so many questions about life.

Like why do mattress stores always make people stand outside and hold up signs? Does that even work?

It just seems like mattresses are one of those very specific things that people go out to buy very intentionally.

Does anyone actually buy a mattress spur of the moment? I feel like mattresses are awful enough to have to buy on purpose, let alone spontaneously.

Awhile back I actually began composing a letter to my state representative, proposing that mattresses, tires, and stamps be free to all constituents. There are some things in life that just really shouldn’t cost any money, you know?

I also need some information on LinkedIn. Mainly, is it really still a thing and why do people keep inviting me?

Is there a referral kickback for getting people to join? Do you get credits to use on Amazon.com?

Every time I get a LinkedIn invitation, I immediately delete it, convinced that it’s actually a Nigerian man who wants to lure me in so he can tell me about his dead aunt’s millions.

And who on earth decided to let those dudes selling remote control cars and helicopters set up kiosks at the mall? This is so not cool; it might be the not coolest thing ever.

Oh hey, dude…thanks for driving your super fast racecar in circles around my 11-year-old-son. Oh wow…only $100? You don’t say!

All I wanted was to get a slice of cookie cake. How about you stop assaulting my head with your helicopter? This is so not okay on so many levels.

Also, did you know that people exist who don’t like cheesecake? It’s true. I have a friend who will not eat cheesecake and I chalk it up to dark magic.

Perhaps one day, I can break the spell. And I’ll start off with these strawberry cheesecake cookies.

These chewy, flavorful cookies are full of strawberries, white chocolate chunks, and cheesecake flavor. A dusting of graham cracker crumbs is the perfect touch.

Strawberry Cheesecake Cookies Photo

    36 Servings

Ingredients

  • 2 1/2 cups All-Purpose Flour
  • 1 teaspoon Baking Soda
  • 2 heaping tablespoons Cheesecake Instant Pudding Mix
  • 2 sticks Salted Butter, Slightly softened
  • 1/2 cup Granulated Sugar
  • 1 cup Brown Sugar
  • 1 tablespoon Pure Vanilla Extract
  • 2 large Eggs
  • 3/4 cup White Chocolate Chips
  • 4 ounces Freeze Dried Strawberries
For Topping:
  • 1/2 cup Graham Cracker Crumbs
  • 1/8 teaspoon Cinnamon

Directions

  1. Preheat oven to 350°F. Line two baking sheets with parchment paper and set aside.
  2. In a medium bowl, combine flour, baking soda and pudding mix and set aside.
  3. In the bowl of your mixer, cream butter and sugar on medium speed until light and fluffy -- about two minutes.
  4. Add the eggs, one at a time, scraping the bowl after each. Add extract and beat until blended.
  5. With the mixer on medium low, slowly add the flour mixture until fully combined.
  6. With a spatula, stir the dough from the bottom a few times to make sure that everything is well mixed.
  7. Fold in the white chocolate chips and strawberries. In a small bowl, mix together graham cracker crumbs and cinnamon.
  8. Scoop dough using a large cookie scoop. Dip the top into the graham cracker crumb mixture.
  9. Place on prepared baking sheets, 2 inches apart.
  10. Bake cookies for about 11 minutes, until puffy and golden on edges.
  11. Remove from oven and let cool on sheets for 5 minutes before removing to wire racks to cool completely.
