As we head back to school, I’ve tried to stay on top of making some delicious breakfast foods for my kids. During the summer, I tend to sleep in and not get up before them, which usually means I’m grabbing the basics like toast and sausage for breakfast.

Although I have more time in the summer months, it never fails that they are always ready to eat the second I get out of bed and have no patience waiting for me to cook. During the school year though, I tend to adjust and start waking up earlier to get prepared before they are up. I like to be able to get everything ready for a smooth morning instead of being in a rush.

One way that we go back to school is with making homemade breakfast items such as these gluten free baked blueberry donuts. These are so simple to make and easy to adapt to a variety of flavors. My kids LOVE these, and it is perfect because they are much better for them than the fried donuts.

My son decided to join in and help me with these, so we also made a powdered sugar glaze for the icing. They can also just be sprinkled with powder sugar without a glaze too if you prefer that. These can be made in just less than 30 minutes and served hot and fresh out of the oven. We usually pair ours with sausage or bacon and sometimes fruit, although that’s not necessary with the blueberries in these doughnuts.

Gluten Free Baked Blueberry Donuts Recipe

    6 Servings

Ingredients

For the Donuts:
  • 1 cup All-Purpose Gluten Free Flour
  • 1/4 cup Granulated Sugar
  • 1 teaspoon Salt
  • 1/2 cup Milk
  • 1 teaspoon Baking Powder
  • 1 Egg
  • 1/2 teaspoon Pure Vanilla Extract
  • 1/4 teaspoon Ground Cinnamon
  • 1/8 teaspoon Nutmeg
  • 2 tablespoons Butter, melted
  • 1/2 cup Fresh Blueberries
For the Glaze:
  • 1/2 cup Powdered Sugar
  • 1 teaspoon Pure Vanilla Extract
  • 2 teaspoons Skim Milk

Directions

  1. Preheat the oven to 350°F.
  2. In a stand mixer, combine flour, sugar, salt, milk, baking powder, egg, vanilla, cinnamon, nutmeg, and butter, mixing after each addition. Mix well until a batter is formed.
  3. Fold in the blueberries.
  4. Spray a doughnut pan with non-stick cooking spray. Divide the batter among the wells, filling each one about 3/4 full.
  5. Bake in the oven for 10-15 minutes, or until nicely browned.
  6. While the doughnuts are baking, whisk together powdered sugar, vanilla, and skim milk.
  7. Remove the doughnuts from the oven and let them cool for about 5 minutes, then carefully remove from the pan.
  8. Glaze and serve.
