Cafe Rio Dressing is the recipe you can now make at home. You won't believe how easy it is!

Are you a fan of Café Rio? If you have one in your town or have ever been, then you know exactly what this recipe is. And I bet you're excited about it.

Café Rio has somewhat of a cult following, and there are copycat recipes all over the place for pretty much everything on their menu. Including these Café Rio chicken tostadas I made years ago!

But the Café Rio Dressing with tomatillos and cilantro is one of my favorite things there. It is pretty much the reason I order the salad every, single time.

The base of this Café Rio dressing is ranch. You can start with your favorite bottle of ranch dressing, or use the packet and follow the directions on the back, or make some from this homemade ranch dressing mix. Then you just dress it up with cilantro, tomatillos and a few other ingredients. The result is a super creamy, slightly spicy, tangy dressing that is prefect for just about anything. Dip your chips in it (my son does, so why not?). Put it on your salad, your tacos, your tostadas, baked chicken taquitos, nachos, burritos… do I really need to keep going?

Café Rio dressing lasts in the fridge for about 2 weeks. It takes less than 10 minutes to throw everything in the blender and make the dressing. So mix up a batch at the beginning of the week, and you can have it all week long. Trust me, you will find all sorts of way to enjoy it.

I am working on a homemade version of Café Rio pork, and then I will be in heaven. I will be able to make my favorite salad or bowl any day of the week without having to drive across town and wait in the crazy lines that are always there!

Cafe Rio Dressing Recipe

  20 Servings

Ingredients

  • 2 cups Ranch Dressing
  • 2 medium Tomatillos, Husks removed
  • 1/2 cup Fresh Cilantro
  • 2 cloves Garlic
  • 2 teaspoons Lime Juice
  • 1 jalapeños Jalapeño, Small, seeded

Directions

  1. Place all of the ingredients into a blender, and blend until smooth.
  2. Store in an air tight container, in fridge, for up to 2 weeks.
