BBQ Chicken Flatbread for those on-the-go nights when everyone's got some sort of practice. Easy, yummy, and a total crowd pleaser.

Did you know flatbread is the new thing? In almost every restaurant, you can get some type of creative flatbread from the appetizer menu. While I love ordering from the appetizer menu, flatbreads at our house mean dinner. Anything that includes chicken, bacon and spinach is a complete meal, right?

Flatbreads are so versatile because you can make a few different ones and everyone in the family will be happy. My kids don’t like spinach but that just means more chicken flatbread for mom and dad. Of course, I made another one without the healthy green stuff but as far as my kids are concerned, they would be happy with plain sauce and cheese. I like mine piled as high as possible with a variation of meat, cheese and veggies.

For this particular flatbread, I used Lavash bread. It reminds me of a very thin pizza crust. My local grocery store sells various brands of flatbreads. They vary in thickness and for me, the thinner the better. I like the thin variety as it makes for an extremely crispy crust. If you can’t find Lavash bread or packaged flatbreads, you can always substitute a thin pizza dough crust or  tortillas. Homemade ones are always the best if you have the time to make them.

In this recipe, barbecue sauce works perfectly as the base to load on the chicken, spinach, bacon and cheese. I love a spicy sauce, but you can use any type you’d like. Spicy, sweet or tangy is all good!

This flatbread recipes cooks very quickly in the oven. It is great to make when my family has a night of sports and activities. As we are rushing home at seven thirty, my mind is racing with flatbread topping ideas. If you don’t want to heat up the kitchen, you can always throw these flatbreads on the grill for a few minutes and have dinner al fresca.

While I love this chicken, bacon and spinach combination, the other possibilities are endless. I even make a flatbread with figs and salami. On some nights, everyone in my family picks their own flatbread toppings.

BBQ Chicken Flatbread Recipe

    4 Servings

Ingredients

  • 2 Lavash Flat Breads, large (8 by 10 inches)
  • 1/2 cup Barbecue Sauce
  • 2 cups Cooked Shredded Chicken
  • 2 cups Baby Spinach, chopped
  • 1/2 teaspoon Garlic Powder
  • 6 slices Bacon, cooked and crumbled
  • 1 cup Mozzarella Cheese, shredded

Directions

  1. Preheat oven to 400°F.
  2. Place the flatbreads on two large baking pans. Spread the barbecue sauce over them.
  3. Top with chicken and spinach. Sprinkle lightly with the garlic powder. Top with the bacon and cheese.
  4. Bake in the oven for 7 to 10 minutes or until cheese is melted and flatbreads start to turn golden brown.
  5. Cool and slice into pieces before serving.
