Cinco de Mayo is an annual celebration honoring Mexico's victory over the French at the Battle of Puebla in 1862.

But in the United States in recent years, the fifth of May has become a day to salute all facets of Mexican culture — an occasion on which we pay tribute to the music, decor, and — of course — the food of America's neighbor to the South.

In fact, these days, Cinco de Mayo is more widely celebrated in the U.S. than in Mexico. Yes, the history of the holiday that's sometimes erroneously described as "Mexican Independence Day" is far more complex than it initially seems.

And so is the cuisine of a country that's often unfairly pigeonholed as the land of nachos, tacos, and burritos. It's much richer and deeper than that.
