These Strawberry Oatmeal Bars are so easy to make and are ideal for breakfast on the go, dessert or a satisfying snack! A true family favorite, they are great for kids' lunch boxes and a good way to include nutritious oats in their daily diets!
This recipe is wonderful just as it is, but there are a couple of ways you can customize it to make it taste extra special!

Make a glaze

A glaze - depending on the recipe - can add a little extra sweetness or flavor to the bars.
Here are three ideas to try...

Vanilla Glaze

1/2 cup powdered sugar, sifted
1/2 teaspoon vanilla extract
1 tablespoon milk 
  1. Mix all the ingredients together in a small bowl, adding a little extra milk if you prefer a thinner consistency.
  2. Drizzle over the cooled oatmeal bars.

Maple and Cinnamon Glaze

1/2 cup powdered sugar, sifted
1 teaspoon maple extract
pinch of ground cinnamon
1 tablespoon water
  1. Combine the ingredients in a small bowl.
  2. Add more or less water to achieve the consistency you prefer, then drizzle over the bars.

Brown Sugar Glaze

1/2 cup powdered sugar, sifted
1/4 cup butter
1/2 cup brown sugar
1/8 cup milk
  1. Melt the butter in a saucepan.  
  2. Stir in the brown sugar and bring to a boil.  
  3. Lower the heat and cook for 2 minutes, stirring continuously.  
  4. Stir in the milk and (still stirring!) return to boil.
  5. Remove from the heat and allow to cool to lukewarm, then add the powdered sugar a little at a time, beating well to make sure the mixture is smooth.
  6. For a thicker glaze, add more powdered sugar - but if it's TOO thick, you can add a little more warm water.

Make your own strawberry filling

This recipe uses strawberry preserves, which is a quick and easy option and tastes delicious. But if you have extra preparation time available, or would perhaps prefer the filling to be a little less sweet, why not make your own?
3 cups of fresh strawberries, sliced
1 tablespoon freshly squeezed lemon juice
1 teaspoon of vanilla extract
1 teaspoon all-purpose flour
  1. Just stir the ingredients together in a bowl, then use in the recipe below in place of the preserves.

How to store your oatmeal bars

You can store these bars in an airtight container in the refrigerator. If you've added a glaze then you will need to store them in a single layer - otherwise, you can place them on top of each other. Be sure to put a piece of waxed paper in between the layers to stop them sticking.
Take them out of the fridge and let them come to toom temperature before serving.
Oatmeal bars freeze well too - just wrap them individually in foil or plastic wrap and freeze for up to 3 months. Thaw at room temperature for a few hours before serving. If you plan on glazing them, do this AFTER they've been thawed - freezing affect the texture of the glaze.

Pioneer Woman Strawberry Oatmeal Bars Recipe

    12 Servings

Ingredients

  • 1 3/4 sticks Butter, cold, cut into pieces
  • 1 1/2 cups All-Purpose Flour
  • 1 1/2 cups Old Fashioned Oats, quick or regular
  • 1 cup Brown Sugar
  • 1 teaspoon Baking Powder
  • 1/4 teaspoon Salt
  • 1 jar Strawberry Preserves

Directions

  1. Preheat the oven to 350.
  2. Butter a 9 x 13 or 8 x 10 baking dish.
  3. Mix the flour, oats, brown sugar, baking powder and salt together.
  4. Now mix in the butter with a pastry cutter until it resembles coarse crumbs.
  5. Gently pour in half this mixture into the pan and pat lightly to pack it a little tightly.
  6. Spoon strawberry preserves over the surface. Keep it even.
  7. With a dinner knife, carefully spread it around.
  8. Sprinkle the other half of the oat mixture over the top and pat lightly once again.
  9. Bake until light golden brown on top. Remove from the oven and let cool in pan.
  10. Cut into squares and serve. ENJOY!
