Microwave Lemon Curd Recipe
Ingredients
- 1/4 cup Butter, melted
- 1/2 cup Granulated Sugar
- 2 Eggs
- 1 Lemon, zested
- 1/2 cup Lemon Juice
Directions
- In a bowl, whisk together eggs and sugar.
- Stir in lemon zest and lemon juice.
- Carefully stir in melted butter.
- Microwave lemon mixture for 1 minute. Stir.
- Continue to microwave in one-minute intervals until mixture begins to thicken and coats the back of spoon.
- Store in an airtight container in refrigerator.
