My family and I got to go to an Ohio State Football game. The day started out with quite a bit of enthusiasm as we made the trek up to Columbus, Ohio, just for this game. I married into a line of serious Buckeye fans and it's now my job to facilitate the growth of the next Buckeye generation. To do my part, I make buckeye candies, buckeye cookies and buckeye cupcakes. As you can see, I'm more about the food than the football.

Luckily, football food is good! I love going to any ball park, whether it be for football or baseball and indulging in all sorts of foods and aromas I just don’t get to experience at home. We had a hard time choosing what to eat during this trip. There were so many yummy things to choose from.

There were all sorts of subs, burgers, pizza and nachos. We wanted one of everything! I happened to catch one vender selling a Buckeye Grilled Sandwich. After a little investigation, I found out it was peanut butter with chocolate fudge, grilled up on French toast bread. My heart skipped a beat. I knew instantly that I wouldn't be buying that sandwich, rather I'd be recreating it home!

I cannot say whether this is an exact replica of the sandwich sold at the stadium, as I didn’t try it. But can you go wrong with melted chocolate and peanut butter... ever? The answer is no, you cannot. This sandwich calls for a sweet bread, to which I add peanut butter mixed with powdered sugar and a quick homemade chocolate fudge sauce.

This sandwich exceeded my expectations. That is saying quite a bit because I consider myself a connoisseur of all things buckeye (i.e. peanut butter and chocolate). The peanut butter and chocolate melt together in perfect harmony. This sandwich is hot, melty, sweet, and delicious. Happiness between two slices of bread!

Grilled Buckeye Sandwich Recipe

    4 Servings

Ingredients

  • 1/4 cup Semisweet Chocolate Chips, Or milk chocolate
  • 1/2 tablespoon Butter
  • 2 tablespoons Powdered Sugar
  • 1 tablespoon Milk
  • 4 tablespoons Creamy Peanut Butter
  • 8 slices Sweet Bread, Like King's Hawaiian

Directions

  1. In a small, microwave safe bowl, combine chocolate chips and butter, Melt for 1 minute. Stir. Heat an additional 15-30 seconds if not completely smooth and melted.
  2. In a separate bowl, combine peanut butter, powdered sugar and milk. Stir until smooth.
  3. Heat a large skillet over medium heat. Divide peanut butter mixture among 4 slices of bread (a little over a tablespoon per slice). Place a tablespoon of chocolate over peanut butter and top each with remaining slice of bread.
  4. Spray the tops of each sandwich with non stick spray. Lay spray side down on hot skillet. Spray the remaining tops of each sandwich.
  5. Heat each sandwich for 2-3 minutes per side or until toasted. Let sandwiches set 1 minute before serving. Work in batches if necessary.
