When my youngest was born, my family and I established a Friday night tradition. I would run out to pick up takeout for the family. Usually this meant a trip through the Chick-Fil-A drive thru.

If I had an especially difficult day, I’d go take the extra time and actually go into the restaurant to place my order. Back then, I’d take any alone time I could get. The kids got their chicken nuggets and a kiddie toy of the day, my husband had a juicy sandwich and I enjoyed a meal I didn’t have cook!

We did this every single weekend for at least six months. We didn’t feel like messing around with packing everyone up in the car to actually go out to eat. It never occurred to us to eat anything different! It was simple and it worked.

Eventually, we all got tired of chicken. Plus we weren’t dealing with a newborn anymore; the baby was ready to eat too. So we ventured out. We explored new restaurants and tried new cuisine. Friday nights began to look very different.

Sometimes I miss those old take out days. I suppose on some level I also miss having a newborn. I really do miss those nuggets and chicken sandwiches too. Incredibly, these sandwiches I’m sharing today come pretty darn close!

You won’t believe that these chicken tenders are marinated in pickle juice! Don’t worry; you only catch a hint of it. My pickle hating kids couldn’t taste it at all! There’s just a mild undertone hidden beneath the breading.

Once the skillet is hot the chicken cooks fairly quickly. Don’t rush to flip the chicken, you’ll want to let the first side sit in the hot oil so the breading stays on the chicken. You want your chicken to be nice and golden brown. I topped our sandwiches with Monterey Jack cheese, a thick tomato slice and more pickles.

Take out Fridays might be chicken nights once more. This time we’ll skip the take out and enjoy this version of our favorite chicken sandwich instead!

Chicken Tender Sandwich Recipe

      4 Servings

Ingredients

  • 1 1/2 pounds Chicken Tenders
  • 1 cup Dill Pickle Juice
  • 2 Eggs
  • 3 tablespoons Water
  • 3/4 cup Self-Rising Corn Meal Mix
  • 3/4 cup Italian breadcrumbs
  • Salt and Pepper
  • 1 cup Vegetable Oil
  • 4 Hamburger Buns
  • 1 Tomato, Sliced into 4 slices
  • 4 slices Monterrey Jack Cheese
  • 8 Sandwich Pickle Slices

Directions

  1. Combine chicken juice and chicken in a large zip top bag. Allow chicken to marinate for at least 1 hour and up to 8 hours.
  2. In a bowl, whisk together eggs and water.
  3. In a separate bowl, combine cornmeal mix and bread crumbs.
  4. In oil in a large skillet. Remove chicken from bag and discard marinade.
  5. Sprinkle chicken with salt and pepper. Soak chicken in eggs and then dredge in cornmeal mixture.
  6. Cook chicken in hot oil for 2-3 minutes per side or until golden. Remove to a paper towel covered plate to drain.
  7. To assemble sandwiches, heat broiler. Place two tenders on the bottom of each bun. Top with cheese.
  8. Broil for 1-2 minutes or until cheese has melted. Top with tomatoes and pickles before serving.
