Tantalize your taste buds with this queso fresco baked in salsa verde. A super easy 2-ingredient appetizer that can be baked in the oven or cooked on the grill!

I love Mexican food. I could never decide between my Mexican food and Puerto Rican food!

Needless to say Latin food has my heart and so does this baked queso fresco.

It’s so simple! All you really need are two ingredients – salsa and queso fresco.

You can use salsa verde or salsa roja, homemade or store bought.

I went with green salsa because I love it. I miss making my own and roasting all the vegetables, but we can’t get tomatillos while we’re stationed here in Japan.

Similarly, you can choose the spice level your family prefers (spicy for us!).

I love that this appetizer can be made all year long. In the cooler months pop it in the oven, and in the summer it can go on the grill.

This appetizer starts with a round of queso fresco. Queso fresco is a mild tasting fresh cheese with a crumbly texture.

Some of my favorite ways to use queso fresco is as the filling in Queso Fresco Enchiladas or sprinkled on Mexican Corn in a Cup.

Queso fresco is not a melting cheese, per se.

You’ll see that when melting queso fresco, it takes on a puffy texture. Reminds me of cheese curds!

To prepare, place the cheese in a heat proof dish, like a cast iron skillet. Top with salsa.

Bake or grill for about 20 minutes until soft, melted and the salsa is bubbly.

Serve with corn chips and dig in!

It also makes a great a taco filling. Stuff in tortillas for a quick and delicious taco dinner.

Baked Queso Fresco Recipe

    4 Servings

Ingredients

  • 1 wheel Queso Fresco
  • 1 cup Salsa Verde
  • Corn Chips, or tortillas, for serving

Directions

  1. Preheat oven or outdoor grill to 350°F.
  2. In an oven or grill-safe dish, place the wheel of queso fresco.
  3. Top with salsa and bake or grill for 20 minutes or until cheese is heated through and salsa is bubbly.
  4. Serve with chips for dipping or use as a taco filling.
